I have been on a soup kick lately. Not just any soup…soups that have meat in them. I know, I know, this is a controversial topic. Some people are quite offended at the thought of eating meat in a soup…but, I am not one of those people. I love my meat in soup. This fish soup is not your traditional fish soup. In fact, I would call it a sweet sour water spinach soup. The sweet in this recipe comes from the dark brown sugar and topped with a couple of jalapenos. The sour is from the water spinach. A tasty and easy-to-make sweet, sour, and spicy soup with water spinach and fish. It is said to have originated in Vietnam.
Ingredients
2 tblsp. extra virgin olive oil | ||
2 garlic cloves, chopped | ||
1/4 cup lemon grass, minced (fresh or frozen) | ||
4 quarts water | ||
1 900 gram entire Asian catfish or Basa, cleaned and cut into pieces | ||
2 pounds (900 g) water spinach, rinsed and drained, cut into 2 to 3 inch lengths | ||
2 tblsp. fish sauce | ||
sugar (one spoonful) | ||
1 tsp. tamarind powder | ||
1 cup chopped herbs (mixed) ( rice paddy herb, saw leaves , and sweet basil leaves) | ||
3 spicy chili peppers, chopped |
To prepare Sweet Sour Water Spinach Soup with Fish, follow these instructions.
- Warm up a big soup pot.
- When the soup pot is heated, add the oil and sauté the garlic until it browns but does not burn. Remove the roasted garlic and put it aside.
- In a soup pot with heated oil, add the lemon grass, mix well, then add the water and boil until the water is bubbling.
- Cook till the fish is tender in boiling water, then add the water spinach and mix to combine.
- Stir thoroughly to combine the fish sauce, sugar, and tamarind powder.
- Add chopped herbs, chile pepper, and roasted garlic to the top.
Serve immediately with rice.
