I have been on a soup kick lately. Not just any soup…soups that have meat in them. I know, I know, this is a controversial topic. Some people are quite offended at the thought of eating meat in a soup…but, I am not one of those people. I love my meat in soup. This fish soup is not your traditional fish soup. In fact, I would call it a sweet sour water spinach soup. The sweet in this recipe comes from the dark brown sugar and topped with a couple of jalapenos. The sour is from the water spinach. There are so many tastes and textures going on in this soup…it’s magical. Enjoy!

When it comes to soups, the hardest thing is to come up with a creative recipe, that’s unique and tasty. I decided to go with a traditional Thai recipe that I often use with fish. The sauce is a bit sweet and sour, and it’s combined with a “mild” fish soup, that’s easy to digest.

It’s a rainy day today, everyone. So, the only thing I want to do now is to make a soup with some fish and some spinach.  Here is a really easy recipe for a sweet sour water spinach soup that can be used in a lunch or as a starter for dinner.  The soup is very easy to prepare and the result is a really tasty drink with a lot of ingredients combined in it.. A tasty and easy-to-make sweet, sour, and spicy soup with water spinach and fish. It is said to have originated in Vietnam.

Ingredients

2 tblsp. extra virgin olive oil    
2 garlic cloves, chopped    
1/4 cup lemon grass, minced (fresh or frozen)    
4 quarts water    
1 900 gram entire Asian catfish or Basa, cleaned and cut into pieces    
2 pounds (900 g) water spinach, rinsed and drained, cut into 2 to 3 inch lengths    
2 tblsp. fish sauce    
sugar (one spoonful)    
1 tsp. tamarind powder    
1 cup chopped herbs (mixed) ( rice paddy herb, saw leaves , and sweet basil leaves)    
3 spicy chili peppers, chopped    

To prepare Sweet Sour Water Spinach Soup with Fish, follow these instructions.

  1. Warm up a big soup pot.
  2. When the soup pot is heated, add the oil and sauté the garlic until it browns but does not burn. Remove the roasted garlic and put it aside.
  3. In a soup pot with heated oil, add the lemon grass, mix well, then add the water and boil until the water is bubbling.
  4. Cook till the fish is tender in boiling water, then add the water spinach and mix to combine.
  5. Stir thoroughly to combine the fish sauce, sugar, and tamarind powder.
  6. Add chopped herbs, chile pepper, and roasted garlic to the top.

Serve immediately with rice.
