white vinegar, 2 tblsp    
sugar (one spoonful)    
a quarter teaspoon of salt    
1/4 cup sweet yellow onion, chopped (option)    
1 peeled, quartered, seeded, and cut into small pieces big cucumber    
1 medium tomato, peeled and chopped into bite-size pieces    

Tomato and Cucumber Relish Instructions

  1. Mix vinegar, sugar, and salt in a small bowl until sugar is dissolved, then add onion, stir well, and leave aside.
  2. Place cucumber and tomato in a large mixing bowl, pour vinaigrette sauce over top, and toss thoroughly before serving.
  3. Serve with grilled meats or seafood.
