1 large bitter melon, thinly sliced    
4 oz. pork ground    
1 egg    
sugar (one spoonful) (this recipe can use up to 1 tablespoon of sugar)    
1 teaspoon of soy sauce    
1 tblsp. soy sauce    
oyster sauce (two tablespoons)    
To soften the bitter melon, add 1/3 cup of water as needed.    
2 garlic cloves, minced    
You may use as much or as little black pepper as you like.    

Stir-frying instructions Pork with Bitter Melon

  1. 2 tablespoons oil, heated in a nonstick frying pan
  2. Then add the garlic and stir cook till it becomes brown.
  3. Cook until the ground pork is nearly done, then push to the side.
  4. Now add the egg and scramble it until it is done, then combine with the ground pork.
  5. Add the bitter melon to the fry pan and toss to combine, then add the water and simmer for a few minutes, until the melon is mushy.
  6. Stir in the fish sauce, soy sauce, oysters, and sugar until the melon is soft, then season with black pepper.
  7. Remove the pan from the heat and adjust the flavor to your liking.

Serve over rice.
