Zuppa Toscana is a delightful, creamy, low-carb soup made with juicy cauliflower florets rather than stodgy potatoes.

  • Italian sausage, 1 pound (I used mild sausage).
  • 1 chopped onion
  • 3 garlic cloves, finely chopped
  • 1/2 teaspoon crushed red pepper
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon of salt, or more to taste
  • 1 cup blumenkohl, peeled and cut into tiny pieces
