If you like classic Thai Beef Salad, you’ll enjoy this quick Meal Prep variation. Meal prepping is very popular, and for good reason. Even though I work from home, I like to have my lunch prepared ahead of time for the week. Things always tend to pop up, and knowing that I have a good lunch prepared keeps me from consuming unhealthy foods. My own preference is to prepare my meals twice a week. I simply can’t seem to find enough time in a single day to prepare lunches and snacks for the whole week. Instead, I prepare a dinner that will last for two to three days, or even fewer if my husband chooses to carry his lunch to work. Then, in the middle of the week, prepare another dinner. This works for me the majority of the time.
If you’re acquainted with Thai cuisine, you’ll note that many salads, such as Larb and Nam Tok, have a similar taste profile. A basic mix of fish sauce, lime juice, and chili flakes serves as the primary dressing. Although other dressing recipes include garlic, onions, and other aromatics, this is the most basic form. This Thai Beef Salad comes together quickly, with just the beef needing to be cooked. Cook the steak to medium-rare, as instructed in my original Beef Salad recipe. Once combined, the acid in the lime juice will cook the steak even more.
To cut down on additional toppings, I opted to use a Herb Spring Mix salad as a foundation. The dressing is seen at the bottom of the mason jar, however the lime juice made the beef too tough after the second day. Instead, I’d suggest serving the dressing on the side or adding it in the morning before going to work. You may alternatively serve the tomatoes on the bottom with the dressing to pickle them, followed by the steak and mixed greens on top. I would only prepare the salad in this manner for a maximum of two days. When you’re ready to eat, just pour it into a dish, mix it well, and serve. Remove the steak and cook it separately if you like it warm. Then, on top of the salad, drizzle with dressing. This seems to be a delicious lunch!

Season both sides of the steak with salt and pepper. Over medium/high heat, heat a heavy pan or Cast Iron skillet. Place the steak on the grill and cook for 3-4 minutes on each side. Remove from the oven and set aside for 10 minutes before slicing thinly.

Alternatively, dress the bottom, then top with tomatoes, meat, and mixed greens. There’s no need to reheat the steak, but if you want, take it from the salad, reheat it briefly, and then combine it with the dressing.
