Chicken in a Garlic-Lemon Pepper Cream Sauce
Time to prepare: 40 minutes
1 hour 50 minutes total time
The amount of time it takes to cook the chicken breasts depends on their size and thickness. Because some chicken breasts are very large, weighing in at over a pound apiece, you may wish to chop them thinner lengthwise to speed up the cooking process. Chicken breasts that had been sliced thinner lengthwise were used in this dish.
In Honor Of The Chicken
- Boneless, skinless chicken breasts, 2 pounds (907 g) (approximately)
- 1-2 tablespoons lemon pepper seasoning (5 ml) or to taste
- a sprinkle of paprika and/or cumin powder (optional)
- 15 mL butter (1 tablespoon)
To make the Creamy Garlic Lemon Pepper Sauce, combine the following ingredients in a mixing bowl.
- 2 tblsp (30 ml) butter or extra virgin olive oil
- 4 garlic cloves (4 garlic cloves), minced
- Depending on how thick you want the sauce to be, 3/4 cup (180 ml) milk or cream
- chicken broth, 1/2 cup (120 ml)
- Worcestershire sauce, 2 teaspoons (10 ml)
- 5 mL mustard (dijon, yellow, spicy brown, etc.)
- 1 medium lemon zest
- fresh lemon juice, 3 teaspoons (45 ml)
- to taste salt
- a pinch of black pepper, to taste (preferably fresh cracked pepper)
- 3 tablespoons chopped parsley (optional garnish)
- Serve with cooked spaghetti, noodles, rice, steaming vegetables, or a side of bread, if desired.
-
Preheat the oven to 400 degrees Fahrenheit.
-
If the chicken breasts are excessively thick, pat them dry and chop them lengthwise. Season the chicken on both sides with the lemon pepper spice. (optional) Paprika and ground cumin are sprinkled over top.
-
Over medium-high heat, heat a large oven-safe skillet. In a pan, melt 1 tablespoon of butter. Sear both sides of the chicken until lightly browned, approximately 2-3 minutes each side.
-
Remove the chicken from the pan after it has browned. Reduce the heat to medium and melt the 2 tablespoons butter before stirring in the garlic. Garlic should be cooked until it is aromatic. Combine the milk or cream, chicken broth, Worcestershire sauce, mustard, lemon zest, and lemon juice in a mixing bowl. Season with salt and pepper to taste after whisking the sauce fully together. Return the chicken breasts to the pan after removing it from the heat.
-
Place the pan in the oven and bake the chicken for 20-30 minutes, or until it is well done.
-
Garnish with parsley if desired once the chicken has finished cooking. Serve the chicken over rice, spaghetti, or noodles with the lemon sauce.
