The Mother’s Day is one of the most special day of the year and its celebration just can’t be missed. If you are looking for something special, this recipe of Keto Chicken à la Queen is just right for you. It is very easy to prepare and can be made within 10 minutes.

Mother’s Day is coming, and we are looking for a recipe that is easy, slightly healthier, and delicious! This recipe is for keto chicken à la queen, one of our favorite recipes on the blog. We use full chicken breasts, but you can use boneless/skinless chicken thighs if you prefer. The chicken breast is marinated to make it easier to cook and not dry out, but can be cooked on a grill or in the oven. Cooking time is about 30-45 mins if you use a grill, and about 20-30 if you use the oven. It is important to allow the chicken to rest for at least 5 minutes before you cut into it, and to serve right away.

Instead of calling it Chicken à la King, we’re calling it Chicken à la Queen in celebration of Mother’s Day. If you haven’t heard of this dish, you were probably born after 1980 and are losing out! Surprise your mother with a timeless favorite for a royal feast by trying this wonderful rich and creamy dish.

Instructions

  1. Melt the butter in a big skillet. Sauté the mushrooms, bell pepper, celery, and onion for 5-7 minutes on medium high heat, or until the vegetables are just soft.

  2. Reduce the heat to low and add the pimentos, cream cheese, bouillon, broth, and heavy cream to taste. Melt the cream cheese and bouillon together in a mixing bowl. Simmer for another 6–8 minutes, or until the sauce has been reduced by half.

  3. Remove the pan from the heat and add the sherry.

  4. Whisk 3 tablespoons of the sauce into the egg yolks in a separate dish. Slowly pour the egg yolks into the vegetables and sauce while stirring constantly.

  5. Stir in the chicken to fully integrate it into the sauce.

  6. If necessary, return the dish to a low heat to fully reheat it, being careful not to allow the eggs to curdle. Serve right away.

From the 1950s until the late 1970s, this dish was very popular. It had grown a bit less exotic by the 1980s. To be honest, I haven’t eaten it since I was a kid, but I recall it having a rich sauce that would be simple to make low carb on a chilly winter day. Chicken broth and bouillon are used in this recipe. The bouillon adds flavor without adding additional liquid to the soup, resulting in a richer sauce.

Incorporating egg yolks into the sauce is another way to thicken it. When you add tempered egg yolks to a low-heat gravy, you get a thicker, richer sauce that’s comparable to hollandaise or even light custard. Although you may skip this step, the meal will taste much better with the yolks.

The sherry is also optional, although it gives the sauce a distinct taste.

You may need to reduce the salt in this recipe if your bouillon or broth is extremely salty.

To make this dish simpler and faster, use a rotisserie chicken.
