In a small mixing basin, whisk together all of the ingredients. Whisk until there are no clumps and everything is fully blended.

Preheat your waffle iron till it’s ready to use. Open the can and spray it with coconut oil spray before pouring in half of the batter. Close the waffle iron and cook for 2-3 minutes, or until it stops steaming.

To create two small waffles, repeat with the remaining batter. With the same batter, you can produce one huge waffle!
Breakfast Sandwiches on the Keto Diet

Fry the bacon until it’s crispy and cooked through, then place it on a paper towel-lined dish to drain.

Crack four eggs into the hot bacon oil (for a round shape, use mason jar rings as seen in the video below) and cook thoroughly, flipping until the bottom is crunchy. If you want medium or hard eggs, break the yolk before turning and cook for an additional 2 minutes.

Cover each egg with 1/2 oz cheddar and a baking tray or lid to let the cheese to melt onto the eggs. Place on a platter and set away.

On a plate, arrange a birch bender toaster waffle and a handcrafted waffle. Stack 2 eggs and cheese on each waffle, then top with two pieces of bacon and finish with the remaining waffles.

Serve right away! It’s best to consume it straight away because it doesn’t keep well.
