This is a simple recipe that has become one of my family’s favorites. It’s very easy to make, and you can serve it as a side dish with any meal. I usually make this with one sweet potato (or yam), but if you want to make this with two or more sweet potatoes, simply cut each one in half.
I’m sure most of you know that sweet potatoes are not really regular potatoes. They are usually orange in color and are very high in beta-carotene which is essential for our eyes, skin and immune system. A new type of sweet potato has just come out on the market – the Yukon Gold, which is very similar to the common purple sweet potato – but it is not always available.

This Sweet Potatoes with Garlic and Parmesanes dish is as simple to prepare as it is tasty. Picky eaters, beware: brussel sprouts are on their way!
How do you prepare sweet potatoes?
While sweet potato skin may be eaten, it can get dried out and hard when roasted. Peeling the sweet potatoes is the first step in this dish. The sweet potato will roast more evenly and crisp up on the exterior if it is cubed. To cube a potato, start by slicing it lengthwise. Each slice of the cube should be cut into even parts.
Sweet Potatoes: How to Roast Them
Preheat the oven to 400 degrees F. In a large mixing basin, place the sweet potato that has been prepared. Drizzle with olive oil and season with salt and pepper to taste. Toss sweet potato sprouts in a bowl to evenly coat them. On a baking pan, spread out the sweet potato. Roast for 20 minutes, turning halfway during the cooking time. The sweet potato will have a crisp skin and a delicate inside.

- 14 cup extra virgin olive oil
- Salt

- 10 Smashed Garlic Cloves
- 12 CUP PARMESAN CHEESE, SHREDDED

Preheat the oven to 400 degrees Fahrenheit.

Sweet potatoes should be peeled and cubed before being placed in a large mixing basin. Drizzle with olive oil and season with salt and pepper to taste. In a separate bowl, crush the garlic cloves.

On a large baking sheet, spread the sweet potato mixture evenly. Roast for 10 minutes in the oven. Roast for another 10 minutes after adding the parmesan cheese. Warm it up and enjoy it!
