I know it’s called “Baking Soda” in the song, but we’re not baking kilo’s over here; instead, we’re producing fantastic chicken wings that will have your guests coming back for more. (Drugs are dangerous!) That’s the main secret to getting those dreamy crispy oven chicken wings – baking powder! You’ll want to lay your wings out before we get to the baking powder. Dry the wings using a paper towel, season them with salt, and set them out for an hour on a cutting board. This will achieve two goals.
- It will bring the wings to room temperature, which is exactly what we want them to be before putting them in the oven.
- In addition, the salt will absorb all of the moisture from the skin. This is fantastic! Because of the absence of moisture, the skin will become very dry.
After an hour, pat the wings dry one more time with a paper tower making sure they are as dry as you can get them. Place the wings into a zip top bag.Now, we add the secret ingredient! For every 10 wings you want one tbsp of baking powder and one tsp of salt. (Salt can be adjusted to taste). Add the salt and baking powder to the bag with the wings and shake it up to evenly coat the wings. Place the coated wings on a greased baking sheet. If you have a baking rack place the wings on that, but it’s not necessary, the wings will be crispy without it as well!
Baking Method in Two Parts
This is an important stage in the process of making crispy oven chicken wings. These pups will be baked in two sections. The temperature will be maintained at 250 degrees for the first 30 minutes. I know, that’s a low bar, but bear with me. Moisture is the enemy of crispiness, as previously stated. This initial 30 minutes will draw out every last drop of moisture from the skin, preparing it for Dr. Crispy’s home visit. After the first 30 minutes, the wings will have begun to crisp up on the outside while remaining soft on the inside.

After 30 minutes of baking at 250 degrees, they should look like this (above). Preheat the oven to 450 degrees. Return the wings to the oven at 450 degrees for 30-40 minutes, depending on their size. If you have any large pterodactyl wings, allow an additional 5-10 minutes. This is the cook time for small-medium sized wings. When you take them out of the oven after 30-40 minutes at 450 degrees, they should look like this.

Save the saucing until after the wings have finished baking. Saucing them throughout the cooking process would reduce the crispiness, which is something no one likes. Instructions:
- Place the wings on a chopping board after patting them dry with a paper towel. Season both sides with salt and let aside for 1 hour.
- There should be some water on the surface of the wings after 1 hour. Place the wings in a ziploc bag after patting them dry with a paper towel.
- For every 10 wings, add 1 tbsp baking powder and 1/2 tsp salt to the bag. Shake the bag to coat the wings equally with baking powder and salt.
- Place the wings on a baking sheet that has been buttered. If at all possible, keep the wings apart.
- Preheat oven to 250°F and bake for 30 minutes.
- Preheat the oven to 450 degrees Fahrenheit and bake for another 30-40 minutes. (Time will vary based on the number of wings and their size.)
- Remove the wings from the oven and set aside to cool for 5 minutes. Toss in your favorite sauce and enjoy!
