Carne Asada Fries are a delicious combination of chopped carne asada, cashew queso, and mashed avocado. A quick and tasty Mexican take on loaded fries.

There are many other versions of carne asada fries, some with pico de gallo and sour cream, but for my family, I wanted to keep this version dairy-free and kid-friendly.

Grown in Idaho Hand Cut Style Fries, diced steak, Cashew Queso (cashews, green chilis, nutritional yeast), 2 avocados, and fresh lime juice are all you’ll need.

Carne Asada Fries: A Step-by-Step Guide

The finest potatoes provide the foundation for the greatest fries. Bake the Grown in Idaho Hand Cut Style Fries for 30-35 minutes on a large sheet pan at 425°F, rotating halfway through.

The fries are crispy on the surface and soft on the inside, making them the ideal accompaniment to carne asada.

Recipe for Carne Asada

These fries are made using my Easy Carne Asada Recipe. You may either purchase steak that has already been diced or dice it yourself. Then season with salt and pepper and drizzle with a little oil.

For extra flavor and crispiness, I suggest cooking the carne asada in a cast-iron pan. Remove part of the liquid from the steak and continue cooking until all of the liquid has evaporated and you’re left with crispy steak pieces.

Recipe for Cashew Queso

This Cashew Queso Recipe is a wonderful dairy-free alternative, but it will also appeal to cheese fans. There are just three components, and everything is mixed together.

In a blender, combine the cashews, boiling water, green chilis, and nutritional yeast. If you’re using unsalted or raw cashews, season them with a pinch of salt.

To thicken the queso, place it in a small pan over medium-low heat and whisk continuously until it thickens, about 5 minutes. As the queso cools, it will thicken even more. This is best served after the steak and potatoes have been cooked.

Finally, we’ll top the Carne Asada Fries with smashed avocado, since my kids adore plain guacamole.

Using a fork, mash two ripe avocados. Using half a lime, squeeze out the juice and season with salt. Taste and make any necessary adjustments. Isn’t it simple?!

Putting the Carne Asada Fries Together

I took the steak from the cast iron skillet when the carne asada was done cooking and left the pieces in the pan (aka flavor). The cooked fries were then put to the skillet.

Place the carne asada on top of the fries, then pour over the cashew queso and top with smashed avocado.

For added heat, sprinkle with cilantro, finely chopped onions, or jalapenos.

The best way to enjoy Carne Asada Fries is to eat them straight away. It will be difficult to keep your family waiting; mine couldn’t wait to get started!

This recipe yielded 4 servings. If you just need a few servings, cut the recipe in half and fry half of the bag of fries.

Fries with Carne Asada and Cashew Queso

Instructions 

  • Preheat the oven to 425 degrees Fahrenheit.

  • Place the whole bag of Grown in Idaho Hand Cut Fries on a parchment-lined baking sheet. Bake for 30-35 minutes, turning halfway through, with an even layer.

  • Heat a cast-iron pan over medium-high heat for the carne asada. Toss diced beef with oil, salt, and pepper. In a skillet, cook the steak. If there is too much liquid in the pan, drain some of it and continue cooking the steak until the liquid has evaporated and the steak has a beautiful crust. Remove the steak from the skillet and set aside the pan drippings.

  • Cashew Queso: In a blender, combine cashews, boiling water, green chilis, nutritional yeast, and a sprinkle of salt. Blend for 30 seconds on high speed. It will be a thin mixture. In a small skillet, cook the combined mixture over medium-low heat. For a few minutes, stir continuously until the queso thickens. Because cashew queso thickens as it cools, prepare it just before serving the fries.

  • Avocado Smashed- mash two avocados together with lime and salt.

  • Add the fries to the pan where the carne asada was cooked once they are done and crispy. Add the steak, cashew queso, and smashed avocado on the top. For added spiciness, add cilantro, coarsely chopped onion, or jalapeño.
