Thai Chicken Fried Rice- Khao Phat Gai | – Learn how to make Fried Rice with Khao Phat Gai in Thai in less than 20 minutes! This special recipe makes a delicious one pot meal for the whole family. You can eat it everyday!

When I was a young child, my dad always made my favorite dish, Khao Phat Gai (Thai Chicken Fried Rice). He started cooking it when I was still a baby, when I had the worst case of diarrhea. This dish is pretty simple. You need chicken breast or chicken thigh, sweet rice, ginger, and garlic. You need to soak the rice in water for 8 hours to make it a little more tender. After that, cook it in a wok with a little oil. In order to make it more flavorful, add some green onion and Thai chili. Once the rice is done, add some chicken and mix everything together.

Recipe for Thai Chicken Fried Rice- Khao Phat Gai | Ingredients: 10 medium spring chicken wings, 1 cup rice, 2 large tomatoes, 2 cups fish broth, 1/2 cup green onions, 1/2 teaspoon salt, 1/4 teaspoon ground black pepper, 1/4 teaspoon sugar, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder Directions: 1. Place chicken wings into pot of boiling salted water (2 quarts water, 1 teaspoon salt per 1 quart water) until cooked through. 2. Remove from pot, rinse and cut into medium-size pieces. 3. Fried rice is one of those dishes that transports me back to my youth. It was a dinner that my mother could whip together in a matter of minutes using leftover rice and any protein she had on hand.

In addition to her renowned Thai Spring Rolls, my mother would always prepare Thai Fried Rice for gatherings and celebrations. I like being able to pass on these recipes to my children.

Thai Fried Rice vs. Chinese Fried Rice: What’s the Difference?

You may be wondering how Thai Fried Rice differs from Chinese Fried Rice if you’ve never tried it. The basic recipe is the same, but the Thai version includes golden mountain spice and a hot fish sauce on top. Cooked tomatoes are also included in the rice, which is unusual in Chinese fried rice. 

Although I may be prejudiced, I love the tastes of Thai Fried Rice!

What Sauce Should I Use?

Golden Mountain Soy Sauce is used in most Thai dishes that call for soy sauce. Regular soy sauce, reduced sodium soy sauce, or liquid aminos may all be used instead. 

You may also use mushroom sauce instead of oyster sauce. These are richer sauces that add sweetness and saltiness to the rice.

Prik Nam Pla- This is the secret to genuine Thai Fried Rice taste. Instead of applying it throughout the cooking process, it’s drizzled over the finished rice as a condiment. 

Prik nam pla is usually prepared using Thai bird’s eye chilies, which are quite spicy! Use chopped jalapenos if you want it to be less spicy.

Fried Rice Cooking Instructions

Cold rice is a solid rule of thumb for any kind of fried rice. This keeps the rice firm and prevents it from becoming too mushy. This dish calls for jasmine rice, but you may substitute long grain or even brown rice.

If you need to cook your rice right away, use less water and make it somewhat dry. Allow the cooked rice to cool before adding it to the meal.

Before you begin cooking, make sure you have all of your ingredients ready and that the pan is hot. In the video, you’ll see that I’m cooking in a stainless steel pan at high heat to keep it from sticking. It will be simpler to work with a wok or a nonstick pan if you have one.

Fried rice is best served immediately after cooking, but if you need to prepare it ahead of time, it may be warmed.

Instructions 

  • Prik Nam Pla is made by combining all of the ingredients in a small serving dish. In a small dish, combine the soy sauce and oyster sauce and put aside.

  • Before you begin, prepare all of the ingredients. 1 tablespoon oil, heated over medium high heat in a big pan or wok In a small bowl, combine the soy sauce and chicken. Cook until chicken is done in a heated pan. Remove the cooked chicken from the pan and put it aside.

  • Over medium heat, add another tablespoon of oil and the chopped onions, minced garlic, and white portions of the green onion to the same pan. Cook for approximately a minute over medium-high heat.

  • Toss in the chilled rice, breaking up any lumps as you go. In the middle of the pan, make a well and break one egg into it. Toss the scrambled egg with the rice to mix. Combine the soy sauce mixture and return the chicken to the pan.

  • Reduce the heat to low and add the sliced tomatoes, white pepper, and half of the green onions. Half of the remaining half will be used for garnish. Rice should be mixed together, then served with sliced cucumbers, lime wedges, and Prik Nam Pla on the side.

Notes

It’s ideal to use chilled rice, but if you have to boil your rice right away, prepare it with less water so that it’s somewhat dry. Allow the cooked rice to cool before adding it to the meal.  

 

This is one of my favorite go to meals when I am craving a really filling and comforting meal. I’ve been a fan of this dish for as long as I can remember, and I’ve tried lots of different versions of it.
