Spring rolls are a popular appetizer at Thai restaurants and may be found in night markets in Thailand. My mother used to make crispy spring rolls for gatherings when I was a kid, so carrying on the tradition is very important to me.
On my site, I strive to offer simple and fast recipes, but this is not one of them.
There is a significant amount of prep work required, and the dish serves 50 tiny spring rolls. You may either reduce the serving size or freeze the folded spring rolls by following the final step.
Let’s get started by breaking down the components of a spring roll.
Wrapper for Spring Rolls
Because this is a crucial component in Thai Spring Rolls, the right skin or wrapper is required. The one you’re looking for may be found in the freezer department of most Asian supermarkets.
Use the fresh spring roll wrappers instead of the dried rice paper wrappers.
If you’re in a hurry and don’t have access to frozen spring roll wrappers, egg roll wrappers can suffice. Keep in mind that they will be fatter, have a different texture, and taste more like an egg roll than a spring roll.

We’re using ground chicken in this dish. Ground pork and shrimp are also common ingredients in fried spring rolls. You may either dice the shrimp finely or pulse it in a food processor a few times.
Use shredded cabbage instead of beef to make the spring rolls vegetarian. You’ll need to boil the cabbage in a skillet with a little oil to wilt it. Use coleslaw mix, which is typically 16 oz., as a shortcut. Noodles, mushrooms, carrots, cilantro stems, soy sauce, mushroom sauce, and seasonings are cooked with the other ingredients. You may skip the eggs and roll the filling once it has cooled.
Bean Thread or Vermicelli noodles are other names for glass noodles. To soften them, immerse them in warm water. Drain and rinse after softening. I prefer to use kitchen shears or a knife to cut the strands down to size; otherwise, they’ll be too lengthy.
Dried Mushrooms- I originally used dry black fungus mushrooms in this dish, but I decided to give dried shiitake mushrooms a try since they are more prevalent. The dried shiitake mushrooms performed well. You’ll need to rehydrate them and cut them up in warm water.
Cilantro Stems—I’m just using the stems and cutting them lightly. The stems of cilantro have a stronger taste, and the leaves darken when cooked. This is a wonderful method to get rid of the stems while keeping the leaves for a fresh garnish.
Golden Mountain Soy Sauce is traditionally used in Thai cuisine. There is a small variation in flavor between this and Japanese soy sauce, but I’ve used both in this spring roll recipe and can’t tell the difference. If you already have normal soy sauce on hand or need a low-sodium version, go ahead and use it. Otherwise, look for Golden Mountain sauce in an Asian store.
Oyster Sauce is a thick, somewhat sweet, and salty sauce made from oysters. Use mushroom sauce instead of shellfish sauce if you have a shellfish allergy or need to make it vegan.
Spring Rolls in the Making
This is the most time-consuming, but also the most enjoyable phase. If you intend to prepare the whole dish, I strongly advise you to get some assistance with this step.
In the video, I demonstrate how to cut the big wrappers into triangles to make them smaller and double the amount, as well as how to cut the tiny wrappers into triangles to make them smaller and double the quantity. You may also purchase two packets and utilize the wrapper as is.
For the ‘glue,’ crack one egg into a small bowel and scramble it.
If you’re cutting the big wrappers into triangles, start with the point at the bottom of your board. Paint the tip of the triangle with your finger dipped in the egg wash.
Then, in the center, near to the bottom, add a heaping spoonful of filling.
Fold one side over, smooth it out, then fold the other side over, smooth it out, and roll it firmly to the top. Make sure the egg wash seals the top.
If you’re using a whole square wrapper, start by cutting it into a diamond shape. Brush the top tip of the wrapper with an egg wash-dipped finger. Fill the wrapper with the filling, fold the bottom over the filling, repeat with the sides, and roll to the top.
You want the roll to be tight and sealed with the egg wash in both ways.
I like shallow frying since it saves oil and is simpler to clean up. I’m using a big skillet and half-filling it with high-heat oil such as Canola. When frying, a good rule of thumb is to keep the oil around 350 degrees; otherwise, the food will absorb the oil instead of becoming crispy.
I can’t stress how important it is to have an immediate thermometer if you don’t already have one. One may be used to monitor the temperature of the oil while grilling or frying meat, poultry, or even fish.
Place spring rolls carefully into the 350°F oil; the number of rolls will depend on the size of the pan. To keep the oil temperature from falling, make sure the pan isn’t overly crowded.
If you’re using ground chicken or pork in this recipe, ensure sure the spring rolls are completely cooked before serving. To achieve a beautiful golden hue, I turn them a few times. Cooking time was about 4 minutes.
Serving and Storing Instructions
The best part is when you get to taste the Spring Rolls!
Remove the rolls from the pan and set them aside to cool for a few minutes on a paper towel lined plate. The filling is going to be very hot!
Thai spring rolls may be eaten plain or dipped in a sweet chili sauce. I just use sweet chili sauce from a bottle.
If you’re preparing all 50 spring rolls, keep them warm in the oven at 200 degrees on a baking rack. If you have any leftover spring rolls, keep them refrigerated and reheat them in the oven at 350°F for approximately 10 minutes, or until warm and crispy.
Another alternative is to roll all of the spring rolls and then freeze them until required. For example, you may freeze a dozen and cook them straight from the freezer.

In separate dishes, soak noodles and dried mushrooms in warm water for 20 minutes or until tender. Drain the noodles and chop them into smaller pieces using kitchen shears after they’ve softened. Mushrooms should be drained and squeezed dry before being diced into tiny pieces.
Remove the frozen spring roll wrappers from the freezer and put them on the counter to defrost for 15 minutes.
Combine the chicken, noodles, mushrooms, carrots, cilantro stems, 2 eggs, soy sauce, oyster sauce, and seasonings in a large mixing bowl. Mix everything together with your hands, using gloves to keep things less messy. The mixture should have a sticky consistency.
You may also do a taste test by placing a tablespoon of the mixture in a microwave bowl and heating it on high for 30-45 seconds.
How to Make Spring Rolls:
As a work surface, use a big cutting board. Carefully separate all of the spring roll wrappers and put them on a wet cloth. They will not dry out as a result of this.
In a small bowel, crack the egg and scramble it. Then place your filling in a neighboring bowl.
Place one spring roll wrapper sheet on your board in a diamond form rather than a square. Dip your finger into the egg wash and use it to paint the tip of the wrapper. Fill the wrapper with a heaping spoonful of filling and stretch it out to approximately 4 inches wide.
To form the spring roll, fold the bottom part over the filling and smooth it over the filling. Then smooth over the filling by folding the left and right edges up against it. Then roll it upwards until it’s completely sealed.
Place the wrappers in a triangle with the tip facing up if you’re cutting them as I did in the video. Dip your finger into the egg wash and use it to paint the tip of the wrapper. Place a heaping spoonful of filling in the middle of the wrapper, towards the bottom, and spread out to a width of about 4 inches. Fold the edges in half and roll firmly to the top.
Heat the oil in a fryer or big saucepan to 350 degrees after you’ve completed all of your spring rolls. Carefully place spring rolls in pan, taking care not to overcrowd it. Flip each spring roll carefully to cook both sides until golden brown.
If you’re cooking spring rolls in batches, keep them warm on a baking sheet in the oven at 200 degrees. Serve with a side of sweet chili dipping sauce when ready to eat.
