Tagalong cookies, the red-box Girl Scout cookies with peanut butter in the center and chocolate dipped edges, have always been a favorite of mine. There’s something about those cookies that I can’t stop thinking about. Because you don’t have to scoop or shape individual cookies, these Tagalong Cookie Bars are very simple to prepare. All three layers are prepared with just a few basic ingredients, and the end product is eerily similar to the original cookies.

Tagalong Cookie Bars: How to Make Them

Preheat the oven to 350 degrees Fahrenheit. Using nonstick frying spray, grease a 9X13 pan.

Combine the flour, baking powder, and salt in a mixing basin. Remove it from the equation.

With an electric mixer, whip butter and sugar for approximately 2-3 minutes in a large mixing bowl. Combine the flour, vanilla, and milk in a mixing bowl and stir just until mixed.

In the prepared pan, evenly distribute the dough. To properly spread the dough, I used a tiny rolling pin.

Bake for 15-18 minutes, or until the edges begin to turn a light golden brown around the edges. Remove the bars from the oven and set them aside to cool fully.

Mix the peanut butter and powdered sugar together until smooth to create the peanut butter filling. Over the chilled cookie crust, spread the peanut butter filling evenly.

Microwave the chocolate chips and shortening in a microwave-safe dish for 45 seconds to create the chocolate layer. Microwave for another 30 seconds after stirring. Stir until smooth and melted, adding additional 15 seconds in the microwave if required. You don’t want to overcook the chocolate, so don’t heat it for any longer than is absolutely necessary!

Pour the chocolate evenly over the peanut butter layer, then spread it out with a butter knife until it’s fully coated. The chocolate will firm up after a few hours at room temperature, but you may speed up the process by chilling the bars for 30-60 minutes. Slice into bars and keep them at room temperature to store or serve.
