If you’re looking for a filling and quick lunch, Strammer Max is the place to go. This classic German open-face sandwich consists of a darker German rye bread, cured ham (such as Prosciutto), and a fried egg on top!
Lisa used to eat Strammer Max when she was a child in Germany. Strammer Max was traditionally served at supper by Lisa’s father, but given the ingredients, it may equally be served for breakfast or brunch.

Eric first met Strammer Max while we were traveling across Germany and wanted to stop for lunch in Passau (alovely town in Bavaria on the Danube river).
Let’s just say he fell in love with it as soon as the waiter handed it to him! It tasted like a combination of excellent North American breakfast ingredients served on superb German bread – and that was a good thing.

Strammer Max, on the other hand, is popular throughout the nation and comes in a variety of flavors.
There are a variety of darker breads to choose from. Although rye is a popular option, you may also try others.
We only had a “seedy bread” when we prepared it for the pictures in this recipe article – we normally make it with a darker bread without seeds. For a little additional taste, we like to top it with thinly sliced onions.

Here are a few things to think about/know before recreating Strammer Max:
- The thickness of the bread is crucial. We like a thick slice that is untoasted, but you may choose a thin piece and toast it as well. Fresh, untoasted bread, on the other hand, is a fantastic method to prepare it.
- It’s okay if the egg yolk is still a bit runny. This means that when it seeps out, you may wipe it up with the bread. If you don’t like runny yolks, you may simply cook it a little harder.
- If you don’t have any cured ham (most often prosciutto in North America), you may substitute thinly sliced cooked ham.

Ingredients
- 2 thick bred rye slices
- 2 Eggs
- For frying, oil
- 4 cured ham slices
- Butter
- Pepper
- Onion is a vegetable (optional)
Instructions
- Cut two rye bread pieces in half. When preparing Strammer Max, we typically cut large slices since that’s how Lisa’s family did it when she was a kid. You may make the slices narrower if you want.
- You may toast your bread in a toaster until it’s slightly brown if you like. We typically skip this step since untoasted rye bread is excellent.
- Butter your bread well and place two slices of cured ham on each piece. Optional: Arrange a few raw onion slices on top of the ham.
- Heat a little amount of oil in a frying pan and break the two eggs into it. Take care not to break the yolk. Season with salt and pepper to taste. Fry your egg for around 6 minutes, sunny side up (yolk up). The yolk should be somewhat runny at this point.
- Place the fried egg on top of the bread and ham using a spatula/flipper. Serve immediately and savor!
Notes
This open-faced German sandwich comes in a variety of flavors. Some individuals choose to use cooked ham or Leberkäse instead of cured ham (especially in Bavaria). Don’t be shocked if you find more variants!
