Split pea soup calls to mind the cold winters of my childhood, but it’s actually a fantastic summertime meal that has loads of protein and fiber, and is equally hearty and delicious.

Most of us are on a diet, and we all know that diatrty is not all about eating the absolut perfect foods all the time, but that is what we tend to believe. So, what is the secret to eating well and still lose weight? In this article, I have outlined the best slow carb split pea soup recipe that is healthy, low carb, and most of all, it keeps you full for a long time.

The more I cook, the more I realize that some recipes are great for slow carb days (like this one: Slow Carb Split Pea Soup) while others can be utilized on fast days. I’ve found that, of all my slow carb recipes, this one is the most versatile. Depending on what I’m having for lunch, I can easily adapt this recipe to make it more of a fast day soup (low fat, low carb) or a slow day soup (high fat, low carb). I’ve made this soup with both chicken and turkey, and I’ve made it with beans and lentils, and I’ve made it with both low and high fat dairy products. I’m not sure about where you guys live, but it’s starting to feel like autumn here in the San Francisco Bay region. What better soup on a cloudy day than split pea soup? This is the recipe I use for a quick, low-carb comfort food dinner. Plus, if you prepare the dish early in the week, you can just reheat individual pieces for a fast dinner the remainder of the week.

Ingredients

  • 2 strips bacon
  • 1 full onion, sliced yellow onion
  • 4 stalks celery, chopped
  • 3 peeled and sliced carrots
  • 2 minced garlic cloves
  • 2 1/2 teaspoon dried marjoram
  • 1 1/2 cup dried green split peas
  • 8 cups of water
  • 1 1/2 pound ham hocks, excellent grade, ideally smoked If you’re using normal ham, be sure to cut it up into big chunks.

Instructions

Cook the bacon in a large saucepan or Dutch oven over medium-high heat. Remove the crispy bacon and set it aside, but keep the bacon grease in the saucepan. To the bacon grease, add the onion, celery, carrots, and garlic. 8-10 minutes, or until tender and starting to brown. Cook, stirring constantly, for 1 minute after adding the meat and marjoram. Add the peas, toss to coat, and then pour in the water. Reduce the heat to a medium-low setting. Cover and cook for 1 hour 15 minutes, stirring every 5-10 minutes, or until meat is cooked and peas are coming apart.

Take the ham out of the soup. Puree the soup using an immersion blender (if using a standard blender, add soup in batches to blender, being careful of splashes if the soup is hot). Return the meat to the broth, cut into tiny pieces. Season to taste with salt and pepper. Crumble the bacon over the top before serving.

This may be prepared ahead of time and, in fact, improves with age (after a day or two).
