Grilled Catfish

  • 4 fresh catfish fillets, each 6 ounces
  • 14 cup cornmeal (yellow)
  • 14 cup flour (all-purpose)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder or dried garlic
  • 1 teaspoon basil (dried)
  • 12 tsp. dried thyme
  • 12 tsp. kosher salt
  • a quarter teaspoon of white pepper
  • cayenne pepper (1/4 teaspoon)
  • 14 cup 1 stick unsalted butter, cut into cubes and refrigerated
  • To serve, garnish with lemon wedges and chopped fresh parsley.
  1. Add the dried onion, garlic, basil, thyme, kosher salt, white pepper, and cayenne pepper to the cornmeal and flour mixture. Dredge the catfish fillets one by one in the mixture in a sealed plastic bag.

  2. Preheat a charcoal grill to medium-high heat. On the grill rack, place a cast iron or heavy enamel skillet. Add the butter after it has heated up.

  3. When the butter has cooled, place the coated fillets flat side up in the pan. Close the grill hood and cook the fish for approximately 6 to 8 minutes. Turn the salmon over and cook for another 6 to 8 minutes, covered. When the fish flakes easily with a fork, it’s done.

  4. Place the fillets on a hot plate and spoon the pan juices over them. Serve with lemon wedges and a sprinkling of chopped fresh parsley on top.

Good to Know – This is a great way to prepare salmon, tilapia, striped bass, or snapper, among other fish. It’s also delicious with boneless, skinless chicken breasts that have been pounded to a thickness of 14 inches.
