- 4 garlic cloves, minced
- 2 tbsp Extra Virgin Olive Oil
- Salt
- Pepper
- Tomato Paste (4.5 oz)
- 12 tsp red pepper flakes
- Vodka, 2 oz
- a third of a cup of heavy cream
- 4 oz. grated parmesan cheese
- Rigatoni (1 pound)
- Optional: basil leaves
Instructions

Heat the oil in a large dutch oven over medium heat. Season with salt and pepper, then add the onions and garlic and sauté until softened and transparent.

Stir in the tomato paste and red pepper flakes until the onions are uniformly coated. Cook, stirring periodically, for 5 minutes.

Scrape off the browned pieces on the bottom of the pan and deglaze with vodka sauce.

Slowly pour in the cream and whisk to thoroughly integrate until the sauce is smooth. Remove the pan from the heat to prevent the sauce from burning.

Cook rigatoni according to package directions until they are al dente.

Stir in 12 cup pasta water and parmesan cheese until the sauce is smooth and creamy. Season with salt and pepper to taste. Add additional pasta water if the sauce is too thick.
