Cheesecake is one of my all-time favorite desserts. However, they are not the simplest things in the world to make at home without a lot of experience. In the scorching heat of summer, the last thing you want to do is overheat your oven. Then there’s the problem of the cake breaking, which may be solved by placing a pan of boiling water in the bottom of the oven, which produces a lovely steamy atmosphere. They are, nevertheless, well worth the effort if done correctly. This berry banana cheesecake isn’t any different.

Simply prepare a full “cake” and slice into individual serving size bars with a hot wet knife before storing. It may be prepared up to 2 days ahead of time and stored in the refrigerator for convenience. Keep the dessert refrigerated until ready to serve for a filling dessert. I’m not a big fan of sugary sweets, but a good cheesecake’s basic whip texture has always been a weakness of mine. In my Ninja Blender, I cream the strawberries and bananas, then incorporate them into the cream cheese mixture until it reaches the proper consistency.

You can enhance and highlight the inherent sweetness of the fruit by using delicious fresh strawberries and a beautiful ripe banana. As a consequence, less sugar or sweetener is required in this recipe. It’s a win-win situation for everyone. This cool, refreshing super berry banana cheesecake dish won’t add too much weight to your waistline. I mean, what’s not to like? The double whammy of fresh fruits also helps us meet one of our daily fruit and vegetable requirements of nine servings. It’s nearly enough to make you forget about the cream cheese, but don’t get too carried away.

A no-bake strawberry banana cheesecake recipe that can be prepared into individual servings to wow your visitors.
Graham Cracker Foundation
- 2 cups crushed graham crackers
- 2 tbsp sugar (granulated)
- 1/2 cup melted butter
Cheesecake Filling
- 2 8 oz cream cheese packets, room temperature
- 3/4 cup granulated sugar (adjust to taste) I use less since the fruit is naturally sweet.
- 1 1/2 cups washed, cored, and coarsely cut fresh strawberries
- 1 peeled and sliced big ripe banana
- 1 teaspoon extract de vanille
- 1 cup heavy cream (whipped)
- For serving, whipped cream and fresh sliced strawberries are optional.
Crust of Graham Crackers

Using parchment paper, line an 8×8 baking sheet. Allow part of the parchment to hang outside the pan to aid in the removal of the cheesecake.

Incorporate all of the graham cracker foundation ingredients in a mixing dish and stir to combine.

Make a good level uniform surface by pressing the mixture into the bottom of your chosen baking pan.

Refrigerate the baking pan for 1 hour to chill the crust.
Cheesecake Filling

In a blender, combine the cream cheese, sugar, strawberries, banana, and vanilla extract until completely combined.

Whip the cream with a cake mixer or a whisk until firm peaks form.

Using a spatula, fold half of the whipped cream into the cheesecake batter. Fold in the leftover whipped cream into the cheesecake batter.

Pour the cheesecake mixture into the crust-lined baking pan. Again, the aim should be to create a beautiful, level surface.

Place the cheesecake in the freezer for at least 4 hours before serving.

Take the cheesecake out of the freezer and set it aside.

After soaking a sharp knife in hot water, dry it with a paper towel. Slice the cheesecake into the desired bar size while the knife is still hot. Depending on your serving size requirements, you may slice into three rows of three or four rows of four.

Keep the cheesecake frozen, but put it in the refrigerator 30 minutes before serving. Whipped cream, fresh strawberries, or both may be added on the top.
Because the natural sugar in the fruit provides enough sweetness, this recipe only needs a little amount of additional sugar.
