One of my favorite parts about eating is that it transforms any ordinary day into a trip to a foreign land, and some of my favorite places to go are India, Korea, and Italy. While some people will eat just about anything there are many of us that choose based on our mood, sensations, atmosphere and desires. I am very conscious of my food and the type that goes into my body so when I am craving something in particular I want it to be an experience worth while!On one Sunday morning I woke up with a strong urge to travel, but where did I want to go? Normally this is the toughest part, but I knew immediately I wanted to head south of the boarder down to Mexico. Since one of Keto Connect’s favorite household meals is breakfast, whether it be breakfast sandwiches or breakfast bowls, I knew Matthew would want to go too! The ‘where’ had been chosen so easily, and fortunately, so had the ‘what’… we looked at each other and knew we had to go the route of a Breakfast Bowl with Mexican Flavors.
So, what should we do?
Because the journey is usually short – just a few of hours – it’s critical that you bring not only the basics, but also high-quality extras! Let’s have a look at the components of a breakfast bowl:
- Eggs
- Chorizo, bacon, chicken, and beef are examples of meat.
- Avocado
I know what you’re thinking: “Wow, that’s a small list!” Yes, it is, but keep in mind that they are only the basics. You could get away with just those three ingredients and still call it a Mexican Breakfast Bowl if you knew you’d be making a short journey. Who are we fooling, though? We’re going to go heavy on the additions since Keto Connect never leaves a guy behind. This is going to be a once-in-a-lifetime vacation! So, let’s get to the (high-quality) additions:

It’s essential to take a break from reality now and again to remind yourself of all the great things in your life. And what better way to do so than by preparing a delectable meal? Mexican Breakfast Bowl
- 2 eggs, big
- 1 chorizo link ((4 ounces))
- 1/2 avocado, ripe
- sour cream, 2 tbsp
- Cheddar cheese, 1/4 cup
- a quarter-sized tomato
- ((optional)) 1 tbsp cilantro
- In a skillet, cook chorizo over medium-high heat.
- Place the fried chorizo on a paper towel and drain off some of the oil (if preferred), leaving enough for the eggs to fry in.
- Scramble two eggs in a pan with chorizo oil over medium heat. If you want it to be fluffier, add more milk.
- Place the eggs in the bottom of a bowl after they’ve been boiled.
- Layer the avocado, cheese, tomato, sour cream, and cilantro on top of the chorizo-topped eggs.
- Enjoy your vacation to Mexico by serving it immediately while it’s still warm!
This is a great breakfast recipe that is full of flavor and can be made in less than 10 minutes. With only 5 net carbs per serving it’s a great way to start the day.
