Single-serve Instant Oatmeal is a breakfast staple in my house. I love the convenience of it and how easy it is to add everything I need for a quick, healthy meal. I also love that you can make a single serving and keep it in the fridge so I can grab it on-the-go or save it for another meal. But when it comes to single serve oatmeal, I have the most trouble with the texture. The consistency is always too mushy for me. My solution? Make it in my slow cooker so it has the perfect consistency and texture.

Matthew and I just recently began experimenting with them and fell in love with them right away. We didn’t mind having anything to take the place of the potatoes since cauliflower is already filling us up. However, we were searching for another low-carb veggie to include into our meals! Radishes are low in carbs per serving and roast up beautifully in a pan or in the oven, making them ideal for our Breakfast Bowl with Low Carbs!

Sausages should be cooked until completely cooked over medium-high heat. Remove the sausage from the pan and put it aside, leaving the oil in it.
Cut the radishes into bite-size pieces and toss them into the pan. Salt & pepper to taste.
Cook until radishes are soft to the bite or punctured easily with a fork. It should take between 8 and 12 minutes.
Meanwhile, cook one egg to your liking and put it aside. We like ours over easy so that the yolk can seep into all of the layers.
After the radishes have finished cooking, stack them with sausage, cheese, and an egg. The cheese should be melted by the heated layers.
Warm it up and enjoy it!
