To begin, let me state unequivocally that they are not potatoes. They are, nevertheless, very deceptive in appearance and mouth feel! Matthew and I just recently began experimenting with them and fell in love with them right away. Because you can easily mix up the ingredients, this is a fantastic breakfast, lunch, or supper option. Another great option is a layer of roasted broccoli on the bottom, with crumbled bacon and blue cheese on top, and an over easy fried egg on top.   • Sausages should be cooked until completely cooked over medium-high heat. Remove the sausage from the pan and put it aside, leaving the oil in it.

  • Cut the radishes into bite-size pieces and toss them into the pan. Salt & pepper to taste.

  • Cook until radishes are soft to the bite or punctured easily with a fork. It should take between 8 and 12 minutes.

  • Meanwhile, cook one egg to your liking and put it aside. We like ours over easy so that the yolk can seep into all of the layers.

  • After the radishes have finished cooking, stack them with sausage, cheese, and an egg. The cheese should be melted by the heated layers.

  • Warm it up and enjoy it!
