It’s been a while since I made freezer meals. That’s probably because I like eating fresh and savory food. But when it’s cold and I need to eat something, I make a quick meal and get it out of the way. I like to keep these freezer burritos in the freezer because they can be made in advance, frozen and used whenever I want. There are a few of these burritos on the blog and I like them. But, they’re not keto so I’m making an updated version. This time, I’m using ground beef, bacon and a couple of other great keto-friendly ingredients.

- Radishes are a great substitute for starchy potatoes. They don’t even taste like radishes after they’ve been pan-roasted! Since fathead pizza, this is the greatest keto find! Breakfast radishes with sliced onions and bell peppers are delicious and very simple to prepare.
- I recommend slightly undercooking the scrambled eggs since the reheating procedure will cook them even more.
- I used a pound of bacon, but breakfast sausage could easily be substituted.
Breakfast Burrito in a Keto Freezer

Bacon, cheese, eggs, and seasoned radish breakfast “potatoes” fill these substantial breakfast burrito pouches.
- bacon (1 pound)
- 1 pound quartered radishes
- 2 tablespoons extra virgin olive oil
- 1 diced green bell pepper
- 1/4 cup red onion, chopped
- 2 minced garlic cloves
- 1/2 teaspoon paprika powder
- 1/2 teaspoon powdered onion
- a quarter teaspoon of salt, or to taste
- a quarter teaspoon of pepper
- 6 eggs
- 2 cups shredded Mexican blend cheddar cheese
- For serving, there are 7 keto wraps to choose from (such as Folios)

Heat the olive oil in a pan over medium heat. Stir in the onion, bell pepper, radishes, and garlic using a wooden spoon or spatula. Paprika, onion powder, salt, and pepper to taste. Allow the radishes to color and caramelize for 10 minutes, or until they are tender. Remove from the heat and set aside to cool.

Whisk eggs in a bowl and scramble them in a skillet on the stove. Season with a pinch of salt & pepper. Undercook them just slightly, so they won’t be overcooked when re-heating later.

Combine the radishes, bacon, eggs, and cheese in the pan after all of the breakfast filling components have cooled. 1 cup of filling each baggy, divided equally into 7 frozen sandwich bags. Freeze for up to 3 months after sealing the bags.

To make a burrito from a frozen pouch, follow these steps:
Remove one bag’s contents and put it on a microwave-safe dish. Set aside after 2 minutes in the microwave. Place a Folio cheese wrap on another dish, on top of the parchment paper that came with it. 90 seconds in the microwave Remove the wrap from the paper as soon as possible and roll up your burrito while the cheese is still warm and soft. The texture of the wrap may get a bit crunchy as it cools, but it’s still delicious!
