Cookies for the Holidays!

What is it about the holidays that makes us feel compelled to bake cookies and pies and devour everything we can get our hands on?! Whatever the case may be, it’s a fantastic excuse since I like cookies and pies! This is our first holiday season on the keto diet, therefore I’m baking keto Christmas cookies for the first time. I wanted to keep it basic while still creating something that was a bit different from your typical Christmas cookies. That’s why I came up with these delicious Cookies with Maple Macadamia Nuts! 

Cookies with Maple Macadamia Nuts

 Originally, these treats were simply plain maple cookies. Over the previous six months, I had attempted several cookie recipes without success. When I first tried coconut flour, I soon discovered that the texture isn’t very appealing or cookie-like. I switched to almond flour but was still having difficulty with the proportions. I wasn’t really resolved until a few weeks ago, and I intended on making as many cookies as it needed to make the ideal almond flour cookies. I must have had a fortunate day since I got these cookies right the first time! I couldn’t wait for Matt to come home and test them out.

What’s the Deal with Macadamia Nuts?

 “I made the ideal cookie!” I said as soon as Matt came through the door. He likes it when I bring him anything fresh I’ve tried to make, even if it’s a disaster, so he grabbed one and bit into it. “What about Macadamia?” he said, his eyes bright with excitement. I tried another, and he was completely correct. His sense of taste was on spot! I splurged on macadamia nuts since I really wanted to make these. But don’t worry, you can use whatever nut you have on hand! We bought a little container, remade them with the nuts, and I came up with my all-time favorite cookie: Cookies with Maple Macadamia Nuts!Maple Macadamia Nut Cookies - Crunchy Keto Cookies!

Maple Macadamia Nut Cookies

10 minutes in total

Cookie Servings: 20

Instructions:

  • Combine room temperature butter and erythritol with a hand mixer.

  • Mix in the egg, vanilla, baking soda, and maple syrup until well mixed.

  • As you combine, gradually add the almond flour. Fold the macadamia nuts into the dough after it has been made.

  • Don’t worry about the dough being sticky.

  • Flatten the dough balls onto a prepared baking sheet to the desired cookie size.

  • Preheat the oven to 350°F and bake for 12 minutes.

  • Allow at least 20 minutes for cooling. Enjoy!
