Key limes are no longer in season, as the fruit has a short season once the weather gets cold enough, but they’re still in season and available at most supermarkets. I like the key limes because they’re small and less sour than other limes, and they’re less expensive. If you don’t like the taste of key limes, make a low carb key lime pie with meringue.
Key lime pie with a meringue shell that’s low in carbs
Is it a meringue crust? Yes! It has much less carbs than nut flours or any other low-carb crust. The macadamia nut-studded meringue has a lovely texture, and it’s the ideal foil for the acidic yet creamy key lime filling. You’ll need to start this a day ahead of time, but it’ll be well worth it!

Instructions

Preheat the oven to 300 degrees Fahrenheit (150 degrees Celsius). Grease a 9″ (23 cm) pie pan generously.

Using a hand mixer, beat the egg whites, cream of tartar, and salt until foamy.

Whip in the vanilla extract and powdered sweetener until firm, glossy peaks form. Add the macadamia nuts and mix well.

Spoon the whipped meringue into the pie tin with care. Make careful to gently press the meringue up the edges of the pan, forming a crust with the meringue.

Bake for 45–50 minutes, or until the meringue is gently golden and firm. Allow to cool before serving.
Important!
Because the crust must chill before filling and the key lime filling must set, you’ll need to prepare this a day ahead of time.
Kristie’s suggestion
If you want to easily remove the pie crust from the pan, line the pan with parchment paper before baking it. If you don’t let the pie cool overnight, the crust may cling.
