Even though you’ve been following my blog for a while, you may not know this: I am not a baker. I have tried making a few things, and they did not turn out well. I guess I am more of a “sky is the limit” kind of person. I never thought to try baking with an Instant Pot, because I assumed it would be a pain to make everything in the same pot, but I was wrong. This recipe came together so quickly, and turned out so well. You can actually clean up the mess in less than five minutes. I love that!

Spice cake in a Keto Instant Pot
Is it possible to use an Instant Pot for anything other than soups and stews? Yes, it certainly can! Desserts are a wonderful way to put this exciting new kitchen tool to good use. In a pressure cooker, cakes remain incredibly moist and delicious. And there’s even a cake option on the Instant Pot. They were meant to be together!
Medium (10 m + 1 h)
Using a soufflé pan, grease a 7-inch (18-cm) ceramic pan thoroughly.
In the bottom of the Instant Pot, place the trivet and one cup of water (not included in ingredients).
Combine the flour, sweetener, baking powder, cinnamon, ginger, cloves, and salt in a large mixing basin. In a large mixing bowl, whisk together the eggs, melted butter, water, and vanilla extract until thoroughly mixed.
Smooth the surface of the batter in the prepared baking pan. Add chopped nuts as a finishing touch. Aluminum foil should be firmly wrapped around the pan. In the Instant Pot, place on top of the trivet.
Close the lid and choose the appropriate cake setting. It will be set for 40 minutes automatically. Allow the Instant Pot to naturally release the pressure for 15 minutes once the cycle is completed. Then take out the ceramic dish by removing the lid. In the pan, cool fully.
Remove the foil off the cake and place it on a serving plate. Serve on its own or with a dollop of mildly sweetened whipped cream.
Carolyn’s hints and suggestions
This simple spice cake is made with almond flour and a variety of pleasant autumn spices such as cinnamon, ginger, and cloves. Butter or a non-dairy oil like coconut may be used to make it. I topped mine with chopped pecans and walnuts, and after it was done, I served it with whipped cream that had been gently sweetened. There’s no need for a sugary icing or glaze since this dish is so simple and tasty.
To make a cake in a pressure cooker, you’ll need a pan that fits inside the cooker and rests on the trivet so you can fill the bottom with water. Most regular Instant Pots can fit a 7-inch pan inside. A springform cheesecake pan works nicely, but the bottom must be wrapped in foil to prevent water from seeping in through the seam. A 7-inch ceramic soufflé pan is ideal for a cake like this.
You may even turn this cake out onto a serving dish after it has cooled if you oil the pan sufficiently. Invert the top by covering it with a big plate. After that, turn it over onto your serving dish.
