Cut the eggplants into 1/2-inch (1-cm) thick slices.

Brush both sides with olive oil and salt and put on parchment paper on a baking pan. Preheat oven at 400°F (200°C) and bake until brown.

Meanwhile, finely slice the onion using a food processor or a mandoline.
