Yummy eggplant. Feta cheese is salty and creamy. Heavy whipping cream with a velvety texture. It’s a party in a baking dish when you all get together. We adore you, low-carb gratin.

Instructions

  1. Cut the eggplants into 1/2-inch (1-cm) thick slices.

  2. Brush both sides with olive oil and salt and put on parchment paper on a baking pan. Preheat oven at 400°F (200°C) and bake until brown.

  3. Meanwhile, finely slice the onion using a food processor or a mandoline.

  4. In a medium frying pan over medium heat, cook the onion for approximately 5-7 minutes. Salt & pepper to taste.

  5. In a baking sheet, arrange cooked eggplant pieces, half of the onions, mint, and parsley, and 2/3 of the feta cheese.

  6. Finish with a final layer of eggplant and the remaining onion.

  7. On top, sprinkle with more feta cheese and shredded cheese.

  8. Over the eggplant, cheese, onion, and herbs, pour the cream. Preheat the oven to 450°F (220°C) and bake the gratin for 30 minutes, or until golden brown and the cream is bubbling.
