You’re going to love this recipe for Swedish classic low carb beef rydberg. Traditionally a hearty meal in Sweden, a low-carb rydberg is a perfect dish to make when you’re in the mood for something truly delicious. It’s traditionally made with pork, but I’ve used lean beef instead, so it’s a little healthier and makes for a delicious meal.

I’ve spent my entire life avoiding meat. I would rather eat tofu than anything that comes from a cow. I never understood why people said that meat is bad for you and that you should eat less of it. I’ve always been skeptical about the benefits of a diet based on meat. And now, a few years into my low-carb lifestyle, I’ve learned that meat is not the enemy after all. In fact, some of the healthiest foods on the planet are meat-based.

Rydberg is a classic meatball recipe made from minced beef and pork, seasoned with salt, pepper, and nutmeg, and simmered in a sauce of chopped onion, garlic, butter, chopped parsley, and beef broth. Beef Rydberg is a typical Swedish meal that includes fried onions and potatoes. With rutabaga, it makes a delicious low-carb treat. Today is the day to try this hearty Nordic dinner!

Instructions

  1. Preheat the oven to 170 degrees Fahrenheit (75 degrees Celsius).

  2. In a large skillet, melt 1 tbsp butter and 1 tbsp oil over medium-high heat. Fry the rutabaga until tender and golden brown. Salt & pepper to taste. Keep the fried rutabaga warm in the oven in a large ovenproof dish.

  3. In the same skillet, add another tbsp of butter and olive oil. Over medium-high heat, fry the onion until it is tender and brown. Season with salt and pepper to taste. Warm combined with the rutabaga in the oven.

  4. Increase the heat to high and cook the meat until it is browned on the outside and slightly pink on the inside. Season with salt and pepper to taste.

  5. Take the rutabaga and onion out of the oven and combine them with the meat in the same dish. Serve with raw egg yolks (one per serving), freshly chopped parsley, and a dab of French Dijon mustard to make it really Swedish.

Tips

If raw egg yolks are too daring for you and your dinner companions, poach them gently in a water bath before serving or leave them out altogether.

To add a little additional protein and aesthetic flair, sour cream may be used as a garnish instead of the egg yolk.

Although the kitchen start is fairly simple, the end result can be difficult to achieve. Many versions use butter and cream, and others use cream cheese and sour cream. The difference between the different recipes is in the amount of sour cream and butter added to the beef, with the higher the amount, the spicier the dish. The original recipe from the Swedish food magazine Kök & Hensyn describes a recipe that uses two tablespoons of butter and one-quarter cup of sour cream..
