Nearly 9 years ago, I published my first Cabbage Rice dish in the HCG Diet Gourmet Cookbook Vol. 1, and it has since become a big success among low carb and HCG dieters. Cabbage Rice Phase 2 is spiced and served in a variety of ways in my cookbook, including Spanish cabbage rice and Asian fried cabbage rice. Cabbage rice is very adaptable and may be seasoned in a number of ways for HCG Phase 2 as well as readily adjusted and changed for HCG Phase 3.

Lime Cilantro Cabbage Rice Phase 2

Ingredients

1 cup cabbage, minced to a rice-like consistency

2 teaspoons chopped cilantro

1 cup of water

1 tablespoon minced green onions

1/2 teaspoon minced garlic

1/2 teaspoon grated fresh ginger

2 tbsp lemon or lime juice (cut into slices?)

1 tsp cayenne pepper (optional)

cumin, a pinch

Season with salt and pepper to taste.

Directions

Prepare the cabbage and other ingredients for the dish. Finely mince cabbage until it resembles rice. Sauté cabbage and garlic in lime juice and water for 1-2 minutes over medium heat. Stir in the ginger and fresh spices, then continue to cook for another 3-5 minutes, or until the cabbage is soft, stirring periodically and adding water as required. Just before serving, remove from heat and stir in fresh, minced cilantro. Lime Cilantro Cabbage Rice Phase 2 should be garnished with fresh lemon or lime wedges.
