Recently, I travelled to Thailand to eat some of the best food in the world. I’m not talking about the tourist-trap food of Thailand, but the real deal. Here’s a fun fact: one of the most popular dishes in the world, and one of the most popular dishes served in Thailand, is not even Thai. It’s called “fish curry”, and in Thailand, it’s served with rice, not side dishes.

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius). A medium-sized baking dish should be greased.

  2. Place the fish pieces in the baking dish as close together as possible. Season each piece of fish with salt and pepper, then drizzle with butter or oil.

  3. In a small dish, combine the coconut cream, curry paste, and chopped cilantro; pour over the fish. Bake for 20 minutes, or until the fish is cooked through.

  4. Meanwhile, chop the cauliflower into tiny florets and boil for a few minutes in gently salted water. Serve alongside the fish.

Tip!

If you don’t have access to coconut cream, you may use canned coconut milk, but you’ll need two cans. Allow the cans to rest in the fridge for several hours or overnight. Carefully open the cans and scoop out the hardened coconut cream on the top.

For this recipe, don’t use the thinner coconut water from the can, but don’t discard it either. You may freeze it and use it in smoothies and other cool beverages.
