Getting the Sausage Ready

We’re aiming for a flavorful spiced sausage that remains moist throughout the cooking process. You’ll need the following ingredients for the meat component of this keto stuffing recipe:

  • 1/2 pound ground pork—look for pork that is free of sugar, maltodextrin, and spices.
  • 1/2 teaspoon pink Himalayan salt– we adore Himalayan salt because it has rich mineral content and health benefits.
  • 1/2 teaspoon cayenne pepper– Cayenne pepper gives any stuffing dish a great kick as well as a smokey taste.
  • 1/2 teaspoon paprika– There are numerous kinds, but we recommend using a “sweet” or regular paprika.
  • 1/4 teaspoon freshly ground black pepper– This provides a strong peppery taste that shines out amid the sage in the cauliflower base.
  • Optional but very recommended: 1/4 teaspoon red pepper flakes It’s just the right size to give a little bit to the sausage without making it overly hot.

Sausage Crumbles in the Oven

  1. To begin, heat a large skillet or saucepan over medium-high heat. When the mixture is heated, add the ground sausage and sausage seasonings. With a wooden spoon, break up the sausage and mix in all of the seasonings.
  2. Continue to stir the meat around to ensure that it cooks evenly. When the chicken is completely cooked and no pink remains, transfer it to a dish and put it aside.

Putting Everything Together

I put up a few pointers to make integrating everything a breeze! Because there are no keto bread cubes in this stuffing, there is no need to bake it for 2 hours like conventional stuffing. We used cauliflower instead of keto bread! A chopped cauliflower foundation absorbs all of the additional chicken broth and spices in this keto stuffing like a sponge. Ingredients for the rest of the stuffing:

  • 1 big cauliflower head
  • 2 tbsp Butter
  • 1/2 cup chicken broth – We prefer chicken broth, but you may also use vegetarian broth.
  • 3 celery stalks, chopped
  • 1 medium diced white onion
  • 2 tsp garlic, minced
  • 2 tablespoons chicken seasoning
  • 1 teaspoon chopped fresh parsley
  • 1 tsp Himalayan Pink Salt
  • a half teaspoon of black pepper

Whether it’s bread-y or not, I’m here to Crumb- Or… Let’s just put everything together, shall we?

  1. Once the sausage is done, return the skillet to the stove and reduce the heat to medium. Add the butter and let it to melt. After that, add the garlic, onion, and celery, and cook for another 2-3 minutes, or until soft.
  2. In a food processor, break up the cauliflower into pieces. Pulse the cauliflower a few times to break it down into smaller pieces, but don’t rice it.
  3. Cook for 2 minutes, stirring constantly, after adding the pulsed cauliflower to the pan. Combine the remaining spices with the broth. Mix everything together with a spoon and let aside for five minutes.
  4. Remove the cover and re-insert the sausage. Cook for another 3 to 5 minutes. Cauliflower should be soft and delicate.
  5. Taste and season with more salt and pepper if necessary. Warm it up and enjoy it!

Saving and storing

It’s OK if you want to create your keto stuffing ahead of time. This keto stuffing recipe does not use bread, which is beneficial in this instance. There’s no need to be concerned about the bread being soggy or freezer burned. I’ve put up a list of storage options based on how and when you prefer to cook for the holidays.

  • Make ahead: This keto stuffing recipe may be prepared ahead of time and kept in the refrigerator for up to 4-5 days. Alternatively, freeze for up to 2 weeks in an airtight container. Make sure to take it out of the freezer a day ahead of time and defrost it.
  • In an airtight container, leftovers may be stored in the fridge for up to 4-5 days.
  • Store leftovers in an airtight container in the freezer, as described above. It is not advised to freeze cauliflower for more than 2 weeks since it may become too mushy when reheated.

  • In a food processor, break up the cauliflower into pieces. Pulse the cauliflower a few times to break it down into smaller pieces, but don’t rice it. Place in a dish and put aside.

  • Transfer to a bowl and put aside after cooked through.
