In this recipe, we combine two yummy ingredients, blueberries and lemon, to create a healthy and delicious muffin. You can use any kind of flour available in the market, but we recommend using coconut flour, as it is a good substitute for wheat flour. We also recommend using coconut oil as the cooking oil, as it is much healthier than using butter. Finally, we recommend using a low carb sweetener, such as erythritol, to aid in the conversion of the sugar into energy.

Bake keto blueberry muffins using these tips:
- The lemon zest, in my opinion, is what makes them so unique, so don’t miss it. If you’re looking for an excellent zester, I highly suggest this Raniaco zester from Amazon. If you want to switch up the citrus, orange zest is a good option.
- To prevent any sticking problems, I suggest using cupcake liners. Keep in mind that the batter for these is meant to be quite thick.
- I like to add the berries last so that each muffin gets a few and they don’t sink to the bottom and get mushy.
- The granulated monk fruit worked well in these. There is no aftertaste, and it is YUMMY. Of course, you could use your favorite granulated keto-approved sweetener.
