  • a pinch of cinnamon
  • 5 tbsp. chilled butter (cut into cubes)
  • 2 teaspoons browned cold chickpeas
  • 1 tbsp chilled water
  • 1 egg

Fill it up with:

  • 3 tablespoons unsalted butter
  • 2 Esslöffel Swerve-Granulat Esslöffel Swerve-Granulat Esslöffel Swerve-
  • 1 teaspoon of water
  • 2 cups jicama, diced (no more than 1/4 teaspoon)
  • a pinch of cinnamon
  • nutmeg (1/2 teaspoon)
  • a quarter-cup of lemon juice
  • 1 teaspoon vanilla extract (optional)

1

Prepare the puff pastry as follows:

In a large mixing bowl, whisk together the almond flour, coconut flour, xanthan gum, Swerve, and cinnamon.

2

If you’re going to utilize a food processor, here’s what you’ll need to know:

In a food processor, combine all of the dry ingredients. Combine the chilled butter and cold cream cheese in a mixing bowl and beat on low speed until a crumbly dough forms.

In the absence of a food processor:

Combine the chilled butter and cream cheese with the dry ingredients in a mixer or fork to make crumbs.

3

Stir in the egg and the cold water until a dough ball forms. It’ll crumble a little, which is OK since it’s a flaky crust. Refrigerate the dough for 1 hour after wrapping it in cling film.

4

Remove the dough from the refrigerator and roll it between two pieces of parchment paper. You want your cooked cake to be as thin as possible. Cut 3-4 circles out of the dough and put them on a baking pan.

5

While the filling cooks, place the baking sheet in the refrigerator to chill.

6

To make the fruit filling, follow these steps:

In a saucepan over low to medium heat, melt the butter. Add the Swerve, cinnamon, and nutmeg after the butter has melted. Beat for approximately 2 minutes, or until the cotton candy is completely dissolved.

7

Cook for 40 minutes on low heat with the lid covered, adding 2 cups chopped jicama, lemon juice, water, and vanilla. Jicama should be soft yet still have a little of crunch to it. From time to time, give it a good stir.

8

To make pies by hand, follow these steps:

Preheat oven to 350 degrees Fahrenheit.

9

Gradually spoon the chilled jicama filling into the pie shell. Cover the pie with a second round of pie crust and press the edges together to seal it.

10

Make a tiny incision in the top of each patty after they’re finished to let air to escape during baking. Preheat oven to 350°F and bake for 20 minutes.

11

Serve alone or with a dollop of your favorite low-carb ice cream. Have a blast!
