The time of year when many people start to give up on their New Years resolutions and instead start thinking about how to hide the fact that they’ve gained the weight back. This keto blackberry cobbler makes the cut since it’s quick and simple to prepare, guilt-free thanks to the few ingredients, plus I always have berries in the fridge that are about to spoil and need to be used up!

What Is the Best Way to Make Blackberry Cobbler From Scratch?

It’s a lot easier than you think. I was pleasantly pleased to learn that cobblers and crisps just need a few cupboard items in addition to the fruit! The freshness and complexity of flavors and textures in this blackberry cobbler will amaze your guests.

The baking of the entire, marinated fruit is what makes this dish so special. It allows the berries to release their natural juices by breaking them down. The xanthan gum then helps to absorb and thicken those liquids, resulting in a perfect combination of crisp topping and luscious, soft berries in each mouthful. With this keto cobbler, you can’t go wrong.

What Is the Best Way to Store Blackberry Cobbler?

There’s something satisfying about eating the cobbler hot and fresh from the pan, but unless you intend to eat it all or have a large enough crowd to offer it to, there will almost certainly be leftovers. So, how can you keep something that should be crispy and gooey right out of the oven without spoiling the cobbler experience?

When it comes to storage and reheating, there are a few things I strongly advise:

  1. When keeping it, try to preserve the blackberry topping intact.
  2. Refrigerate for up to 5 days in an airtight container.
  3. Put it in the oven to reheat for the best flavor. A microwave will suffice and the cobbler will still taste excellent, but the oven will crisp and bubble the cobbler again.
  4. Preheat oven to 300°F and bake for 10-12 minutes.
  5. 60-90 seconds in the microwave

If the instructions below don’t give it away, this is going to be one of the simplest desserts you prepare all year. It’s ideal for serving at breakfast with friends (no one would suspect it’s low carb), bringing to Thanksgiving dinner, or preparing on a hectic weekday when you’re craving something light and sweet.

Blackberry Cobbler on the Keto Diet

A very easy and delicious keto blackberry cobbler recipe with little ingredients and cleanup!

Time to prepare: 25 minutes

Instructions:

  • Preheat oven to 375 degrees Fahrenheit.

  • In a mixing dish, combine blackberries, 1 tablespoon erythritol, lemon juice, and xanthan gum using a spoon, making sure everything is thoroughly covered. Transfer to an oven-safe 8-inch skillet.

  • Whisk together the egg, melted butter, remaining erythritol, stevia, and vanilla in a separate dish. Whisk in the almond flour until a thick dough forms, switching to a spatula as needed.

  • Bake for 20-25 minutes, or until the top is golden brown and the berries are bubbling, till the dough has been spread over the berries.

  • Allow for a 5-minute rest before serving. Serve with a scoop of your favorite low-carb ice cream (we like Rebel and So Delicious!).

  • It’s best to keep it in the fridge for up to 5 days in an airtight container.
