Are you a fan of the Instant Pot electric pressure cooker? If so, you’re in luck! Instant Pot Creole Pork Stew is one of the best Instant Pot recipes I’ve ever tried. It’s a rich, robust, and flavorful stew that’s perfect on a chilly fall or winter night.
Creole pork stew cooked in the Instant Pot has a long history in Louisiana. Creole sauce is actually a French sauce. It’s a very thin, meaty sauce, usually based on a brown roux, but can also have many other flavors added. Typical Creole sauces are usually made with a brown roux (similar to a roux for making a roux for gravy) and then finished with a few herbs, spices, and sometimes tomato or tomato paste. For this recipe, I use a simple Creole sauce, but feel free to experiment with different seasonings and other ingredients.
There are a few things that you need to know before you start this recipe. First, pork loin can get pretty fatty and dry if cooked for a long time, so it is best to buy one that is already super dry. Second, the pork loin should be cut into thin strips, so that when you sear them, all of the pieces will be the same size and so that the chunks will be nice and uniform. Finally, you will need to have your instant pot on the stove at the same time that your stove has the pork loin in the oven.

In the kitchen, what is a trinity mix?
Onion, celery, and bell peppers make up the trinity mix. It plays a crucial role in Cajun and Creole cuisine. Most savory meals start with this combo! It’s usually added to a roux to start a stew, soup, sauce, jambalaya, piquant sauce, or nearly any other Cajun or Creole main meal. So many dishes benefit from the combination of the three tastes!
What spices are used to make creole seasoning?
Creole and cajun culinary terminology are often used interchangeably. There is, however, a distinction between the two. Garlic powder, onion, black pepper, and cayenne pepper are all common ingredients in Cajun flavor. More herbs, such as oregano, basil, and paprika, are added to seasoning with creole, which extends beyond these fundamental spices. Creole, in our view, is a more strong mix, but it has such a wonderful robust taste!
The following are the ingredients for our Instant Pot Creole Pork Stew:
- diced jalapeno
- canned red beans
- Broth made with chicken
- Trinity mashup (diced peppers, onions, celery)
- Ribs with no bones
- Creole seasoning
To prepare our Instant Pot Creole Pork Stew, follow these steps:
Remove the seeds from the jalapeño by cutting it in half and scraping them out. The jalapeño should then be diced and placed in the instant pot.
Stir in the red beans (not drained), chicken broth, and the trinity mix of chopped onions, celery, and peppers.
Cut the boneless ribs into bite-sized pieces and cover with the creole seasoning after all of the other ingredients are in the instant pot.
Cover and stir into the bean mixture. Set the pressure to high and the vent to seal for 18 minutes. Release the pressure as soon as the timer goes off. Carefully remove the cover and stir the stew.
Serve and have fun!

Ingredients
- 1 jalapeno pepper, diced
- 2 cans red beans, 15.5 ounces
- 2 quarts chicken stock
- trinity mix (8 oz) (diced peppers, onions, celery)
- Boneless 1.5 pound ribs
- 2 tablespoons creole seasoning
Instructions

- Prepare the jalapeno by chopping it into tiny pieces.
- Fill up the IP address. Combine the beans, stock, and trinity mix in a mixing bowl.
- Cut the ribs into small pieces and season with creole spice.
- Cover and stir into the bean mixture.
- Set the pressure to high and the vent to seal for 18 minutes.
- When the timer goes off, immediately release the pressure.
- Serve with or on top of cornbread.
