- 40 g sugar
- 1 teaspoon extract de vanille
- 150g heavy cream
Instructions
Cake:
- In a mixing dish, whisk together the eggs, maple syrup, and sugar.
- Over a double boiler, whisk until the mixture is just heated.
- Remove from the heat and whisk until the mixture is pale and frothy.
- Combine the sifted flour and cocoa powder in a mixing bowl.
- Mix in the melted butter and warm milk until everything is well mixed.
- Preheat oven to 350°F and bake for 12 to 15 minutes.
- Allow it cool fully before cutting out your chosen form. I used cookie cutters that were 3.5 inches in diameter.
Icing made with cream cheese:
- Cream the cream cheese until it is light and frothy.
- Beat in the vanilla and sugar until they’re fully combined.
- Using a spatula, fold in the beaten heavy cream until it is completely mixed.
