- cooked shredded chicken breast or chicken thigh flesh, 1/2 pound (227 g) (2 cups)
- 1 tblsp (15 ml) extra virgin olive oil
- 1/2 medium (0.5 ) chopped onion
- 2 garlic cloves (2 garlic cloves), minced
- 1 teaspoon (15 ml) grated or finely minced fresh ginger
- 1 1/2 teaspoons fish sauce (23 mL) (or use Tamari Fish Sauce for Gluten Free)
- 4 cups (960 mL) low sodium chicken stock (here’s a recipe for making your own)
- 1 crushed Kaffir Lime Leaf (optional)
- Smashed fresh lemongrass stalk, approximately 2″ long
- 1 (1 ) fresh Thai chili, minced, or to taste
- 1 (1 ) chopped bell pepper
- 1 big (1 large) chopped tomato
- 2 tablespoons lime juice (30 ml)
- garnish with chopped cilantro

Add oil, onions, and garlic to a hot pot. Cook until the liquid has become transparent.

Combine the cooked chicken, ginger, and fish sauce in a mixing bowl. Cook for approximately 1 minute, stirring occasionally. Combine the chicken stock, Kaffir lime leaf, lemongrass, bell pepper, tomatoes, and chili pepper in a large mixing bowl.

Bring to a boil, then reduce to a low heat and cook for approximately 5 minutes. Remove from the heat and, just before serving, squeeze in some fresh lime juice. Taste the soup and adjust the seasonings to your liking. Serve with chopped cilantro as a garnish. Enjoy!
Note 1: The saltiness of various types of fish sauce varies, so adjust appropriately. Taste the broth, then add more fish sauce if you want the soup to be saltier.
