I’ve made a few gluten free or sugar free cookies over the years, but I love cookies, and I love baking, so I knew I would have to come up with a way to make them. I developed a recipe with no gluten, sugar or eggs, but, thankfully, it was delicious nonetheless.

I was raised eating cookies for breakfast, and I’m convinced there is nothing better than a warm chocolate chip cookie for breakfast. My mom always made them for me, and they were always fresh from the oven. I never knew that a gluten free cookie could be just as good, until I tried my first one. It didn’t taste anything like the ones I remember, and I knew right then and there that I had to try and make them myself. I love cookies for breakfast, and my favorites are the ones with a lot of crunch! This cookie checks both of those boxes: it’s nutritious enough to eat as a breakfast cookie, and it’s crispy from beginning to end. All of the wonderful components in these cookies make them the perfect morning cookie. These cookies’ seeds and fiber will keep you full and energetic all morning!

You’ve come to the right place! I may not have mentioned it, but these cookies are nut-free, which is a big plus for me and anybody else who suffers from nut allergies. They’re tightly packed and filling, similar to a nut-filled cookie but without the nut. It’s also a gain for people who can eat nuts, since nuts are rich in calories and may cause stomach pain if consumed in large quantities. I’ve eaten more than 5 of these cookies in one sitting and had no problems! Win!

Sugar-Free Gluten-Free Cookies
We’ll be traveling a lot in the next months, and the first thing that sprang to mind was to pack these cookies. They’re the ideal travel snack since they’re extremely satisfying and keep for up to 8 days in the fridge! Our sugar-free graham crackers and low-carb peanut butter are also excellent travel snacks! These gluten-free, sugar-free cookies, on the other hand, are my absolute favorite.

Sugar-Free Gluten-Free Cookies
You’ll be glad you have this gluten-free sugar cookie recipe on hand when the holidays arrive!

Instructions:

In a blender or food processor, combine all of the dry ingredients. Remove from the equation.

In a mixing dish, combine the butter, stevia, and extract using a hand mixer. Combine the eggs once more.

As you combine the dry and wet components with your hand mixing, do it in two sections.

Make 16 cookies using a cookie scooper or a spoon, and place them on a parchment-lined baking sheet. Because they will not spread in the oven, flatten them down as thinly as possible before placing them in the oven.

Preheat the oven to 350°F and bake the cookies for 25-28 minutes. Keep an eye on the temperature of the oven since it varies.

Allow to cool completely on a wire rack. Enjoy!
