A Halloween dessert that is both easy to make and low in carbs? YES PLEASE! This recipe is inspired by the amazing low carb pumpkin cookies that I made last year, but I have made some minor tweaks to this recipe to make it even easier to make and lower in carbs.

Halloween is a great holiday for creating ridiculously delicious treats. From the classic chocolate-dipped Hershey bars to the recently popular avocado chocolate bark (which has been blowing up Pinterest), there is a variety of delicious treats to choose from. The low carb treats are equally delicious, and who wouldn’t love to eat a good old Halloween cookie? This time of year, we are bombarded with sugar-filled treats for every occasion, and that can make these treats so much worse for us.. Add This To Your Low-Carb Cookie List!

Personally, my favorite part is the decorating and eating, but this is also a great cookie without all the decorations. The pecan shortbread base is crunchy, buttery and the perfect simple cookie for all times of year. You can even switch up the nuts you use and toss in some pumpkin pie spice or cinnamon to spice things up! If you like making and eating cookies, this is definitely one you need to try – the frosting just takes it to the net level!

Our Low-Carb Options

Halloween is only the beginning of the low-carb delectableness that is going to befall you. Instructions:

Cookies

  • Using a fork, mix all of the dry ingredients in a small bowl. Remove from the equation.

  • Melt the butter in a large mixing basin. Add half of the dry ingredient mixture and the vanilla extract. Using a hand mixer, combine the ingredients.

  • Mix in the egg, then add the remainder of the dry ingredients and mix one final time.

  • Crush the pecans to desired size in a ziploc bag and mix them into the shortbread batter evenly.

  • Place the whole mixture on parchment paper and shape it into a rectangular log with your hands (seen in video). Freeze for 30 minutes after wrapping the wood in parchment paper.

  • Preheat the oven to 350°F and prepare a baking sheet by lining it with parchment paper.

  • After 30 minutes, cut the log into 1/4-inch thick cookies; we were able to get 24 out of it.

  • Bake for 15 minutes, or until the edges are golden brown. Allow for a 20-minute cooling period before attempting to make mummies out of the cookies!

  • Fill ziploc bags with frosting and snip the corner tips to pipe out the icing to create mummies after the cookies have cooled and been coated (described below). This is an excellent opportunity to engage the children and allow them to have some fun.

Glaze

  • In a microwave-safe bowl, melt the cacao butter and add the powdered erythritol.

  • Half-dip the cooled cookies in the batter and place them on the baking sheet where they were cooked.

  • Use the remaining glaze to top the cookies before putting them in the freezer.

  • After 20 minutes in the freezer, the cacao butter will have solidified and become white.

Frosting

  • Vanilla: Using a hand mixer, combine all of the ingredients in a large mixing basin.

  • Chocolate: Using a hand mixer, combine all of the ingredients in a large mixing basin, except the cocoa powder. Add the cocoa powder and mix again until the mixture is smooth.
