Halloween is a holiday that many people love, so we had to get in the mood and create some keto-friendly Easy Halloween Cookies so you could enjoy the season as well! It’s also a fun way to engage the kids, since who doesn’t like decorating cookies with low-carb, edible frosting? That’s the routine I follow: eat a little, frost a little. Halloween Cookies that are Simple!
We understand that Halloween is a time when candy is thrown into pillow cases and consumed by the pound, but why can’t the same be said about cookies?! If you don’t want to go to the effort of baking cookies this year, these Ice Cream Bites are a great alternative. They’re Snickers fat bombs that taste just like the ice cream Snickers you remember from your childhood! Why not make the ice cream bites and these simple Halloween cookies because Halloween only comes around once a year?

Low Carb Mummies! | Easy Halloween Cookies

Instructions:
Cookies

Using a fork, mix all of the dry ingredients in a small bowl. Remove from the equation.

Melt the butter in a large mixing basin. Add half of the dry ingredient mixture and the vanilla extract. Using a hand mixer, combine the ingredients.

Mix in the egg, then add the remainder of the dry ingredients and mix one final time.

Crush the pecans to desired size in a ziploc bag and mix them into the shortbread batter evenly.

Place the whole mixture on parchment paper and shape it into a rectangular log with your hands (seen in video). Freeze for 30 minutes after wrapping the wood in parchment paper.

Preheat the oven to 350°F and prepare a baking sheet by lining it with parchment paper.

After 30 minutes, cut the log into 1/4-inch thick cookies; we were able to get 24 out of it.

Bake for 15 minutes, or until the edges are golden brown. Allow for a 20-minute cooling period before attempting to make mummies out of the cookies!

Fill ziploc bags with frosting and snip the corner tips to pipe out the icing to create mummies after the cookies have cooled and been coated (described below). This is an excellent opportunity to engage the children and allow them to have some fun.
Glaze

In a microwave-safe bowl, melt the cacao butter and add the powdered erythritol.

Half-dip the cooled cookies in the batter and place them on the baking sheet where they were cooked.

Use the remaining glaze to top the cookies before putting them in the freezer.

After 20 minutes in the freezer, the cacao butter will have solidified and become white.
Frosting

Vanilla: Using a hand mixer, combine all of the ingredients in a large mixing basin.

Chocolate: Using a hand mixer, combine all of the ingredients in a large mixing basin, except the cocoa powder. Add the cocoa powder and mix again until the mixture is smooth.
