2 eggs
2 tsp extract de vanille
flour (two cups)

1 teaspoon of baking soda

Microwaving butter is my preferred method of softening it. It is indeed quick, but you must be cautious not to melt it. Simply put the whole stick of butter in the microwave (as long as it isn’t covered in foil!) and heat for 6-7 seconds. If the butter is still very cold, wait another 5-7 seconds before checking it. You may require many intervals, and if the butter begins to feel soft, you may reduce the last period to just a few seconds to avoid melting.
Actually, I like to use my microwave’s defrost option – I’m not sure what that mode does differently, and it takes a little longer (near to 30 seconds), but it appears to be simpler to soften the butter without melting.
