- Chop each gizzard into four pieces one at a time. Repeat with the remaining pieces and put aside.
- Cook the bacon pieces in a large Dutch oven over medium heat until the fat has drained out. Take them out and put them aside.
- Sauté the onion in the bacon grease for approximately 8 minutes, or until it begins to become golden brown. Increase the heat to medium-high and stir in the carrots, celery, pepper, and garlic. Add the thyme, oregano, and red chili flakes after 2 minutes of cooking.
- Stir in the tomatoes and let them to color slightly for about a minute before scraping the bottom and reserving them. Rep this process 3–4 times more.
- In a large mixing bowl, combine the wine, vinegar, chicken broth, Worcestershire sauce, and bay leaves. Add gizzards to the mix. Bring the water to a boil. If you hard boil your gizzards, they will become tough.
- Reduce heat to low, cover, and cook for 2-1/2-3 hours, or until meat is very soft, stirring periodically.
