  • 2 pound steak cubes
  • Tenderizer for meat
  • 3 1/2 pound of flour
  • salt (two tablespoons)
  • a quarter teaspoon of black pepper
  • paprika, 2 tablespoons
  • 2 eggs
  • 1 gallon of milk
  • shortening or frying oil

To make the gravy

  • 2 – 4 tablespoons drippings de viande
  • a quarter cup of flour
  • 4 quarts of milk
  • salt and black pepper, freshly ground
  1. Tenderize the steaks on both sides using meat tenderizer. Mix the salt, pepper, and paprika into the flour with a fork to make the coating. In a mixing dish, whisk together the eggs and milk. While assembling the steaks, heat the oil/shortening over medium heat.

  2. You can cook more than one at a time if you have a big pan. Cover the bottom of the skillet with enough oil/shortening to cover it by 1/2 inch.

  3. Each steak should be dipped in flour first, then in egg and milk, then back in flour, then back in egg and milk, and last in flour before being gently placed in the hot oil. Fry for approximately 10 minutes, then flip the steak—carefully!

  4. Fry the other side for 5 minutes or until golden, then transfer to a paper-toweled dish to drain.

  5. Transfer 2-4 tablespoons of oil from the frying pan to the sauce pot and heat on medium.

  6. To make a roux, stir 1/4 cup flour into heated oil with a fork until golden brown. Stir in the milk until the mixture bubbles and thickens to your satisfaction.

  7. Season the gravy with salt and pepper.

  8. Serve the gravy with mashed potatoes and the steaks.
