I was in the mood for a carbonara and wanted to try out using bacon in the recipe instead of pancetta. I found some good instructions on how to make a carbonara sauce from scratch, and I went with that recipe. While I was cooking, I found myself thinking about how I was putting bacon in a carbonara! There was a moment of panic when I realized that I was in the middle of making a carbonara sauce and I forgot to saute the bacon. But I was lucky, because I had just also started cooking the bacon in the same pan the carbonara was going to be cooked in. Next time, I will make sure that the bacon is cooked first, but in the meantime, I will be using pancetta

The chicken is seasoned gently and baked. Grilling the chicken is another option, but if it’s chilly outside, baking or using a grill pan is a wonderful alternative. I’ve been living in apartments for a long time, so grilling isn’t an option for me. Instead, I roast in the oven and use grill pans. Anyone who has a house and has enough room for a barbecue makes me envy. Someday, I’ll acquire one, but not in San Francisco!
My Bacon Cooking Cheat
I have a bacon hack that requires no cleaning, no mess, and produces excellent crispy bacon. I use a baking sheet with a cooling rack that can be used in the oven. I use aluminum foil to line the interior of the pan, then place the cooling rack on top of the metal and arrange the bacon on the rack. After 8-10 minutes in the oven at 400 degrees, you’ll have excellent bacon. Tossing the aluminum foil and giving the rack a quick wash is all that’s required for cleaning.

Preheat the oven to 375 degrees Fahrenheit.

Season the chicken liberally with salt and pepper. Bake for 20 minutes, or until chicken is cooked through, in an ovenproof baking dish.

Preheat the oil in a big pan over medium-high heat while the chicken is roasting. Cook for a few minutes, or until garlic has softened. In a separate bowl, mix together the heavy cream, egg yolks, and parmesan cheese. Add the peas and mix well.

Spaghetti should be cooked until al dente.

Bacon may be cooked on the stovetop or in the oven. Cut into half-inch chunks.

In a large mixing bowl, combine the pasta, bacon, and carbonara sauce. Place the chicken slices on top. Enjoy!
