- 2 pound bone-in chicken thighs
- 1/2 cup freshly squeezed lime juice
- 2 teaspoons chopped fresh tarragon
- 1/4 cup extra virgin olive oil
- 1 small sliced yellow onion
- 1/2 teaspoon Tabasco or other spicy pepper sauce
- Kosher salt and black pepper, ground

Combine the lime juice, fresh tarragon, olive oil, onion, and hot pepper sauce in a mixing bowl. Fill a resealable plastic bag halfway with the mixture.

Using kosher salt and ground black pepper, season the chicken thighs. Place them in the marinade, close the bag, and place them in the refrigerator for at least 4 hours.

Preheat a charcoal barbecue or a gas grill to medium heat. Grease the grate lightly.

Remove the chicken thighs from the marinade and shake off any remaining marinade. Cook for approximately 30 minutes, flipping periodically, until the thighs are cooked through and no longer pink in the middle near the bone.
If you don’t have access to a grill or the weather isn’t cooperating, try baking the thighs in the oven.
They should be lined up in a baking dish or sheet pan with a little space between them.
Bake for 45 minutes at 375°F, or until the juices flow clear and the middle of the thigh closest to the bone is no longer pink.
Pour a bit of the marinade into the dish or pan and over the tops of the thighs to keep them moist throughout the baking process.
Food for Thought – While the combination of lime juice and fresh tarragon is what makes this dish unique, you may use different herb and juice combinations to get the same effect.
