Wash tomatoes and dry. Cut a small slit in the bottom of each tomato and discard the top. Place tomatoes on a baking sheet and bake for 15 minutes. I’ve always been fascinated with stuffed tomatoes. But a lot of them are filled with all sorts of heavy ingredients like ground beef or turkey, cheese, and even bacon. You know, the kind of thing you can only eat once in a blue moon. I’ve tried a lot of stuffed tomatoes over the years, but none of them quite hit the spot like the ones I made at my house. To make them even more special, I used a mix of ingredients that only my family will enjoy. (You know, the kind that doesn’t have any cheese, turkey, meat, or bacon in it.)

Tomatoes are one of the most popular vegetables in the world. I mean, I love them too but I have to admit, I am not a huge fan of tomatoes. I know they are good for you, and they are the base for almost every pasta sauce that is served in Italy but they are not my favorite food.. There are traditional comfort meals and traditional comfort foods reimagined. This Stuffed Baked Tomatoes dish belongs to the latter group. To make a great supper, tomatoes are filled with a combination of rice, ground meat, tomato sauce, and spices.

What are baked filled tomatoes, and how do you make them?

Baked filled tomatoes are tomatoes packed with rice, ground meat, tomato sauce, and spices before being baked. The filling may be different, but this is my favorite. This meal is identical to conventional Baked Stuffed Peppers, except the filling is served in a different vessel.

What kind of tomatoes should I use?

Fresh tomatoes are required for this dish. You may use any color tomato, but a beef tomato or similar big type is my recommendation. When selecting a tomato, look for one that is firm and devoid of blemishes. Slice the top off the tomato and remove the seeds and innards with a spoon before preparing it. Avoid tomatoes that have started to soften or those have black patches on the skin. The soft areas on these tomatoes may have overripened, causing them to cook quicker than the rest of the tomato, resulting in overdone patches.

Is it necessary to boil the tomatoes before filling them?

While tomatoes do need some time to soften in the oven, this dish is best started with raw tomatoes. The Baked Stuffed Tomatoes are even delicious as leftovers, which is one of the reasons I adore this dish. As the liquids redistribute, the flavors have more time to develop and the pepper has more time to soften.

  • 4 tomatillos
  • 2 tbsp Extra Virgin Olive Oil
  • 12 CUP DICED ONION
  • 2 garlic cloves, minced
  • 12 LBS GROUND BEEF
  • Tomato Sauce (8 oz)
  • Tomatoes, crushed (8 oz.)
  • Salt
  • Pepper
  • 12 CUP RICE, UNCOOKED

 

Instructions

 

 

  • Preheat the oven to 350°F (180°C).

  • Remove the seeds and slice off the top of the tomatoes to prepare them. Set aside in an 8-by-8-inch baking dish.

  • Heat the olive oil in a large pan over medium-high heat. Cook, stirring occasionally, until the onion and garlic are softened, approximately 5 minutes.

  • Cook until the ground beef is ground, breaking it up into tiny bits as it cooks. Get rid of any extra fat.

  • Combine the meat, tomato sauce, tomatoes, and rice in a mixing bowl. Season with salt and pepper to taste.

  • Fill the tomatoes with the meat mixture. Cook for 40 minutes, uncovered, or until fork tender. Allow to cool slightly before serving.
