This recipe, which is called Carne Asada Stuffed Poblano, is high on my list of favorite Mexican recipes because it is tasty, and it is also easy to prepare. Carne Asada is a widely known Mexican dish that is basically a dry meat cut that is unsauced, grilled and cut into small strips. It is a common appetizer and can be served in many ways. You can serve it as an appetizer with chips and salsa or you can eat it as a main dish with tortillas.

Stuffed Poblanos Ingredients

Roasted Poblanos, Refried Beans, Carne Asada, Cooked Rice, Tomato Sauce, and Shredded Cheese are some of the ingredients in this dish.

Roasted Poblanos- Poblanos have a rough outer shell that must be removed before eating. This is made simpler by roasting them until they are blistered on the exterior. For instructions on how to roast the poblanos, see the section below.

Refried beans serve as a “glue” to hold the filling and poblano pepper together. I used my Refried Beans in the Instant Pot recipe, but I won’t hold it against you if you use canned beans.

Carne Asada is just chopped beef seasoned with salt and pepper and combined with a little oil. Because you’re using high-quality meat, you’ll just need a few minutes to prepare it.

I also suggest cooking it in a cast iron pan to assist the steak pieces acquire a good sear and color.

Cooked Rice- I have pre-cooked rice packets on hand for a fast side dish or filler. I needed to stretch the half-pound of steak I had to serve four people in this instance. It was a great way to spread it out with the rice.

Tomatoes Blended- A sauce was required to tie the rice and meat combination together. I used my own tomato sauce with Fideo, Albondigas, Lentejas, and, of course, Mexican rice.

It ended up being lovely and saucey since the rice and steak were already cooked, which was great. I could have easily devoured a bowl of this!

Poblanos: How to Roast Them

Place the poblanos in a baking dish, the same one you’ll be roasting them in, and broil them.

Rotate each poblano until roasted and blistered on both sides. Remove the dish from the oven and cover it with plastic wrap until it is cold enough to handle. The steam also aids in the peeling process.

If you have a gas grill, you may use tongs to hold the poblanos and roast them over an open flame. Rotate each poblano until roasted and blistered on both sides. Remove the dish from the oven and cover it with plastic wrap until it is cold enough to handle.

Remove the plastic wrap from each poblano and rub off the top layer of skin. Remove all of the seeds from the interior of the poblano by cutting it in half long ways.

How to Put the Stuffed Poblanos Together

In a greased baking dish, place the halved poblanos. On the bottom of each poblano, spread an equal layer of refried beans.

Top with shredded cheese and a few spoonfuls of the carne asada rice mixture, or omit for a dairy-free option.

To warm everything up and brown the cheese, bake at 350 degrees for approximately 15 minutes. For a few minutes, you may also turn on the broiler.

The stuffed carne asada poblanos are a complete dinner in and of themselves. For added flavor, throw it some avocado and salsa.

Poblanos Roasted:

  • In a blender, purée Roma tomatoes, half of a small white onion, garlic cloves, and chicken broth until smooth. If you’re using water, add 12 teaspoons of salt. If necessary, season with additional salt.
