What are meltaway cookies, and how do you make them?
Meltaway Cookies are similar to Mexican Wedding Cookies in appearance. They have a delicate, buttery feel that melts in your tongue!
Ingredients for Vanilla Meltaway Cookies
-Butter: To make a rich-tasting cookie, we’ll need 1 cup (two sticks) softened butter.
-Cornstarch: Adding 3/4 cup cornstarch to the cookie dough will give it a wonderful, soft texture.
-Powdered sugar: 3/4 cup powdered sugar keeps the texture soft and the taste sweet.
-Vanilla: For a delicious vanilla cookie, we’ll need 2 tablespoons vanilla extract. For a stronger flavor, I like to use higher-quality vanilla, but use whatever you have on hand.
-Flour: For the foundation of this cookie dough, we’ll need 1 to 1 1/2 cups all-purpose flour, although the exact quantity may vary. If you reside in a humid environment or at sea level, you will need to increase the amount of flour in this recipe. So instead of using 1 cup of flour, use 1.5 cups and bake at least 3 or 4 cookies as a tiny test batch to ensure that the cookies don’t spread too thinly.
Glazed with Vanilla
-Butter: 3 tablespoons melted butter will provide a deeper taste and gloss to our frosting.
-Vanilla Bean Paste: 1 teaspoon vanilla bean paste adds additional vanilla taste. This is one of my favorite things to use since it adds vanilla bean flecks!
-Milk: We’ll need 3 tablespoons of milk to get the right consistency for our frosting.
-Powdered sugar: To make a smooth and delicious frosting for our cookies, we’ll need 1 to 1 1/2 cups powdered sugar.
VANILLA Meltaway Cookies Recipe
Combine the butter and cornstarch in a large mixing bowl.
Combine the powdered sugar and vanilla essence in a mixing bowl and whisk until smooth.
Mix in the flour until the dough comes together and the flour is completely absorbed.
Refrigerate the dough for 10-15 minutes after covering it.
Preheat the oven to 350 degrees Fahrenheit.
Scoop out half-teaspoons of cookie dough. This is done using a tiny cookie scoop. Then shape the dough into a ball and place it on a cookie sheet lined with parchment paper. In rows of 45 cookies, you may fit approximately 20 cookies per sheet.
Remove from the oven after 9 minutes of baking. Flatten the tops of the cookies somewhat while they are still hot and fresh by gently pushing down on them with the bottom of a glass.
Allow the cookies to cool for a few minutes on the baking sheet before transferring to a wire cooling rack.
Allow 10 minutes for the cookies to cool completely before applying the glaze.
