Who doesn’t love asparagus? It’s so versatile it can be enjoyed in so many dishes. And when you want to satisfy your asparagus cravings, you need to make sure to have the best asparagus gnocchi recipe. I’ve created this creamy roasted asparagus gnocchi recipe as a way to include asparagus into your daily diet without having to sacrifice flavor or texture. There are literally hundreds of different flavours and styles of Gnocchi, from the rustic Italian to the classic. But today, we will be showing you one of the most amazing recipes ever for this dish. That is because we are going to be taking the classic one, and we will be making it healthier and healthier.

Pasta is a favorite comfort meal of mine. To be honest, I probably consume much too much of it, but who can blame me? Because asparagus is in season right now, I chose to prepare Gnocchi with Creamy Asparagus.

Gnocchi in a cream sauce with flavorful roasted asparagus is the star of this dish. It’s become a go-to dish for me, and I’m guilty of overdoing it.

What exactly is gnocchi?

Gnocchi is an Italian pasta that is characterized by its soft dough dumplings. Typically, they are cooked with potatoes and flour, although other variations may contain ricotta, cheese, or cornmeal. Gnocchi has a pillowy soft dough texture with ridges on the outside that allow sauce to adhere to the pasta. Gnocchi may be eaten with a variety of sauces, including as cream, tomato, and pesto.

Potato gnocchi are used in this dish. For convenience, I used store-bought gnocchi, but you can alternatively make them at home for that extra pillowy soft texture that gnocchi is renowned for.

How to prepare asparagus for roasting

Arranging asparagus for roasting is a simple, hands-off process. Preheat the oven to 425 degrees Fahrenheit. degrees Fahrenheit. Trim the ends off the asparagus and cut it in half (or thirds of it is a large stalk). Drizzle with olive oil and place on a baking pan. Season with salt and pepper to taste. Roast for 5 minutes, then stir and roast for 3-4 minutes more, or until cooked through.

For the most uniform cooking, select asparagus stalks of medium thickness when roasting. Very thin stalks may wither during roasting, while larger stalks may take longer to cook and cook at a slower pace than the rest of the pan’s contents.

  • Fresh or store-bought 10 oz. gnocchi
  • 2 Shallots Minced
  • 1 Clove Garlic Minced
  • 1 cup chicken broth
  • 12 CUP CREAM
  • 12 CUP GRATED PARMESAN CHEESE
  • 2 Tbsp Flour
  • 2 tsp Thyme (Ground)
  • Parsley optional

  • Saucepan

Storage Suggestions

Refrigerator: This gnocchi dish may be kept in an airtight container in the refrigerator for up to 4 days. To reheat, warm in the microwave or on the stovetop until well warmed.

Gnocchi may be kept in an airtight container in the freezer for up to 2 months. To reheat, thaw in the microwave for 30 seconds and heat till warm.

Asparagus, raw: Store asparagus in the same way you would cut flowers. Trim the asparagus bottoms and put in a glass cup or jar with one inch of water. Refrigerate for up to 4 days after covering with a plastic bag.

  • Trimmed Asparagus, 1 pound
  • 2 tbsp Extra Virgin Olive Oil
  • Salt
  • Pepper
  • Fresh or store-bought 10 oz. gnocchi
  • 2 minced shallots
  • 1 garlic clove, minced
  • 1 cup stock made from chicken
  • 12 CUP OF CREAM
  • 12 CUP GRATED PARMESAN CHEESE
  • 2 tablespoons flour
  • 2 tsp Thyme (Ground)
  • Optional parsley

 

Instructions

 

 

  • Preheat the oven to 425

  • Trim the asparagus stalks by cutting off the final 12 inches. Half the stalks and put them on a baking pan. Drizzle with olive oil and season with salt and pepper to taste. Toss after 5 minutes of roasting. Roast for a further 3-4 minutes, or until the asparagus has softened.

  • Cook shallots and garlic in a large pan until softened. Combine the chicken stock, cream, parmesan cheese, thyme, and flour in a large mixing bowl. Cook, stirring occasionally, until the liquid has reduced and thickened.

  • Bring water to a boil in a separate pot and cook the gnocchi according to the package directions.

  • Toss in the gnocchi and toss to mix. Season with salt and pepper to taste after adding the asparagus. Enjoy!
